I live in Trivandrum. Chaos is a part of the nature of traffic in India. And driving here is no fun. Kerala is second state in India with the highest density of per capita vehicle ownership. The city has overgrown its roads the primary reason for traffic congestion. The church you got into is called Palayam Church. It is one of the landmarks of the city. The Palayam Juma Masjid Mosque is also an equally important landmark, and you captured the idea of this country of how we manage to live together without getting on each others throats. The architecture on the buildings are a mix of influences including traditional Travancore(old Princely state in South of kerala) Traditional, British and Portuguese designs. For a traditional food selection you can try curry's based on coconut milk as a base such as Fish or Beef Mappas. Another favourite is Nadan Beef Ullarthiathu which is traditionally fried beef curry in meat masala with chopped coconut. Delicacies like Karimeen (Peal Spot Fish) pollichathu slow steamed in a banana leaf sachet coated with specially prepared masala in a coal bath. There are tinges of the colonial past in stews both Beef and Fish. And then there is the famed Kallu Appam, a type of traditional bread made from fermented rice batter. The fermentation is done using traditional toddy that gives it a unique sweet flavor. The primarily oil we use is from coconut, which adds a unique flavor to all our dishes. We also have tamarind and mango dominated curries unique to this side of the country. We use both raw and ripe mango. For the vegetarians, the spread is liberal use of varieties of Kale, cabbages, long beans etc in thorans(chopped spiced and cooked sides), kalans ( browned based on coconut paste and curry masala), achars (spicey masala based pickles), bitter gourd - deep fried or curried, tomatoes both raw and ripe used in various combinations with other veggies. You can also find raw banana based fries both as snack and as part of mainstream cuisine. The best part of India is its people and culture. Keralites (People of Kerala for which Trivandrum is the capital) are warm and friendly. Life can be demanding for us here, but we are stoic, worldly wise and helpful. Oh by the way, we are not used to a lot of formal greeting like saying hello or good morning. That doesn't mean we are unfriendly.

Food culture is not a one day action but is a time taking long process which depends on the region it's natural condition, availablity of resources , climatic conditions, soils, culture, custom and other factors as well.... So whatever they eat that's food only may be we don't like that food we can't disregard . That may be in any form... Like they eat whatever that is available to the region... India is a secular nation where people have rights to preach and practice what they want. India's national disha is Khichdi which is designated only as it has diverse cuisine. North Indian states have better crop as the states are settled on planes... Simultaneously the Hilly region have difficulty to grow crop round the year so they have different food culture... People living in the dried desert region have different food culture like it's due lack of water, land area to grow crop and all.... People living in the island of India have difficulty to grow crop so they depends on the natural resources like fish... People living in the forested region depends on the forest to acquire their foods... Geography will determine the development of of people and their culture.

Hi bro, the food you ate from the road side stall is "porotta". When the same porota is cut into small pieces and added with the chicken curry, it becomes the "kothu porota" that you had at the restaurant. That means the two foods you ate today are basically the same 🤪🤪🤪

My ancestors lived in Barton Hill. That was a different time _ a beautiful environmental friendly home on the Hill. If I was in good health I would have packed my bags and gone back to retrace my roots. Tiruvananthapuram was the capital of a kingdom for almost 4 centuries.And was not under British rule technically.Travancore was that state which got expanded as Kerala in 1950s. Like Mysore or Jaipur the kings kept their head quarters beautifully.
