The food looked really good. My only question is that I wonder why so many of the Filipino dishes that I have been served in the United States are so bad? So much of the food is cooked way in advance and if you get there late in the day, the food is past gone.

It's quite similar to places outside of the Philippines. It's more expensive and you don't get the exact taste you're looking for most of the time. So we would just cook ourselves.😅

Secondly, about the tamil word "Kari" being the origin of the word "Kare Kare", and how Indian Sepoys have played their part in the history of this dish..
