Forget Easter cake! Try this Parisian pancake from 1894 - a real delicacy from grandma's baking book. With simple ingredients and just a few steps you can conjure up this heavenly cake that everyone is guaranteed to enjoy.
📋 INGREDIENTS:
45 g fresh yeast (1.59 oz)
1 cup milk (250 ml)
500g butter (1.1 pounds)
3 eggs
3 egg yolks
150 g sugar (3/4 cup)
125 g currants (4.4 oz)
125 g raisins (4.4 oz)
1/2 tsp salt
50 g Succade (1.76 oz)
50 g almonds (1.76 oz)
1 teaspoon vanilla sugar (alternatively, about 1/4 teaspoon vanilla extract can be used)
Lemon peel
nutmeg
3 tbsp cognac
625 g all-purpose flour (5 cups)
Powdered sugar for sprinkling
Bake at 160°C (320°F) with fan for 30 minutes, then continue baking for 20-30 minutes.
