I had commented on your vid yesterday when you were syncing your carbs. Definitely get you some fuel / carb cleaner and run it threw the lines real good. Either your pilot or main jet is clogged for sure. My 95 was doing the same stuff it sat up for forever I bought it for cheap, your videos have essentially helped me get it running again. Took me 2 full bottles of STP fuel and carb cleaner a few full gas tanks of actually riding it, and a bottle of seafoam half n half in the crank case + gas tank, for it to finally clear whichever jet must of been clogged up.

Usually first 1/8th throttle and idle is the domain of the idle jet and the air/fuel mix screw. It you don’t have the ultrasonic Chem dip is the solvent you can submerge the carb in the can and let it work on the deposits. Sure the idle set screw could have been tweaked and forgotten about but it’s always worth starting with carbs that are cleaned and don’t have any blockages internally in the channels and then all the jets cleaned and the emulsion tube cleaned. Coming off that 1/8th to more throttle and having issues is transitioning to the needle and the very top end is all main jet as no needle obstruction anymore.

Most likely the pilot jet is gunked up. Pull the carb and clean her up...blow through the jets. Idle issues with the need for throttle are usually dirty idle circuit. Do you have an ultrasonic cleaner?......worth every penny. Some guys have luck getting some seafoam into the carb and letting it sit. If the tank is clean could be varnish....if it has rust could be plugged with fine sediment. Good fortune.

Congratulations forgetting yours running! Ive had mine for about 3 years and like you I tinker with it every now and then until i give up. I couldn't get any spark and checked continuity to all the "safety" switches as well as the resistance of coils, ICM etc. I finally gave up last week and took it to a Honda shop to diagnose. Oddly they said it was the Ignition Control Module (ICM) as they had a used "94 for sale and swapped the ICM's and it got spark. Im not 100% believing this but they said if I order a replacement and bring it in they will get it to fire. I'll let you know! Yours seems like its a fuel issue if it runs a bit then stops. If you get it running and when it starts to shut down try squirting the ether and if that peps it back up then you'll know its a fuel issue. I have this exact same 600 and cant get it started so i watched your videos. Your starter switch was working fine then the next clip you had it all apart then you said you bought another starter switch then next video you got the engine to start. So what was the issue? Ive checked everything on mine that you checked but im not getting any spark to the plugs. Thanks for the videos but.... what did you do to fix yours!!???

It is still being difficult! I am able to get it to run and it ends up shutting off and not starting again. I parked it to the side and worked on others. I will have to get back to it again. I purchased other coils, new plugs and wires. Hoping that help a bit!

Turn the idle adjustment up a touch and see if it will idle.

That don't sound right. Yea, Honda's are sensitive when cold and when the air cleaner is off. I would guess you have a carb issue or a fuel delivery issue. Did you toy with the F/A adjustment already? Don't matter, you'll get it sorted.
