Forrest Galante goes mushroom hunting for golden chanterelle near Santa Barbara, California. This is a rare event in Southern California and I'm always very excited when it happens! We made a delicious, gourmet wild mushroom pasta meal and it was incredible!

Not a formally trained chef but someone that has been in the kitchen and business for almost 20 years. People really are missing out when it comes to tasting different mushrooms, every mushrooms is NOT built equally at all. So if you get the opportunity to Try an uncommon mushroom, esp this one, do it!

That's awesome, the most I've ever got in a patch was just over ten pounds it felt like we would never get through them. I've still got those chanterelles in the freezer from last fall and have never tried them with pasta. Also, you're very luck to have people to show you where to find them!

My parents would dehydrate them and can them. I grew up with spaghetti with chants, steak with chants cooked in butter, etc. Also wild pacifica blackberries, raspberries, salmon, trout, clams, etc. When we left the country I had my first white button mushroom. Yuck! Flavorless.

Wow! I have never seen a patch of Chantrelle's like that. I saw a small clip somewhere of you naming a beefsteak mushroom (correctly). I feel like the general public has this dangerous idea of what beefsteak mushrooms actually are. Somehow false morels have been way too many times incorrectly labeled as beefsteak. While some false morels are edible, the fact that there are poisonous look a likes, I think, make it a subject worthy of being talked about. I don't know how this has happened, but you can do a search of beefsteaks on-line and sooner or later you'll find somebody mis-labeling a false morel.
