There is definitely some hitreg stuff going on, but not as much as you think. You can block throwing knives, whether they are stabbed or thrown. I'd say about 30%-40% of the hitreg seen in these KZbin videos is actually the opponent blocking the knife throw. In your defense, the animations still look like they were hit. As an example, I direct you to 2:00.

The apron is the chef of the seas jacket, which you gain access to by being in a guild that’s level 40 or more. Can be equipped directly from the clothing chest, no purchase needed. The sword is the heavy sword of bristling barnacle which is unlocked for purchase at the weapon shop when you complete the commendation hoarder of barnacled gold. This commendation is found in the gold hoarders tab for reputation and is completed when you sell 300 shipwrecked chests. Shipwrecked chests can be found underwater on shorelines of islands, looted from skeleton ships, or found within the hull of shipwrecks. Chest marked as skeleton chest do not count for the commendation.

I believe twitch has required add runs after a certain amount of time that the stream has been on Mason tries to delay/run them when nothing is on but sometimes that doesn't work. edit: why I haven't mentioned KZbin in this is because I was watching the stream on KZbin and an add wasn't running for me during this moment.
