So these rock. Well I made an ever so slight variation. I slow cooked 5lbs worth of yellow onions (that's all my cooker would hold), with 1TBS pink salt, 1TBS black pepper, 2TBS brown sugar, 2TBS white sugar (added later as it wasn't sweet at all when cooking) and 1.5 cups Jim Beam. Slow cooked for 10 hours and then strained and dried. 5lbs netted me 4 trays at 13.5oz each "wet". REALLY REALLY good. so many uses. As a snack (absolutely) or as a topping on more things than I can count. Next batch I'll remove the white sugar as they're a little sweeter than I'd like. My only problem is my HR is a new model we just got 6 weeks ago and it has no count-down, but dang is it fast. This batch finished, perfectly dry (no cold spots) after 14 hours. My dryer is setup in a room with AC that we keep at 76 during batches.

Eat dry as a very tasty treat. Re hydrate and put them on a grilled hamburger. DELICIOUS

John, so you didnt use any butter or oil? I saw a couple of people used a little balsamic vinegar in the initial step.. I would imagine that will add some intense flavor.

I did not, I did a later video where I discovered by accident (I was making bourbon chicken) that bourbon is a fantastic additive, still no butter and I didn't finish it off in the skillet like I did in this video DELICIOUS! I made carmalized onion balls with that load

Thanks, added to the list. I like this idea of FD thing that aren't the prepackaged items. The wife loves Funions, so this could be a great substitute for her. ;) Georgia has Vaidalias and Washington has Walla Walla Sweets as naturally sweet onions go.
