METHOD:
Husk corn. Boil 2-3 minutes. Cool in ice bath 5 minutes, until not hot. Cut from cob. Measure into quart size airtight bags. Freeze.
We did 12 ears and ended up with 5 bags containing 1.5 Cups, and 1 bag containing 2 Cups.

My mother used a angel food cake pan or bunt pan to cut the corn. Place ear in the center of the pan and cut into the pan. We cut hundreds of ears this way.

@@barbrichards6229 Hi can you explain exactly how you did the corn ? Did you use the inside hole 🕳️ of the Cake pan and just scrape the corn 🌽 off that way? I'm trying to find a better way to do it as I will blanch and freeze about two of those big bens they use on the veggie boy's and by the time I get done I'm wore completely out. I'm disabled myself so it's hard on me to do all that corn . I have cancer as well so that doesn't help matters none either . So I am having to find better ways of doing things that is easier on me.

So funny to see how many different ways everybody freezes corn. I have been doing it for 50 plus years. Do it on how your family taught you. Do not worry about how other people do it. You are doing your best and that's what counts. Keep up the good work. Love the video. Thanks for letting me come along. Enjoyed.

We cut the corn off raw with an electric knife, for every eight cups of corn add to one stick of butter. Bring it to a simmer while stirring, pour on a big cookie sheet and put it in the freezer to cool. Then package in quart bags and freeze. We've been doing it this way for more than thirty years. Great job guys and keep up the food preservation... it's fun to do it together.

The natural enzymes in corn need to be inactivated before freezing to prevent both loss of color and nutrients, and flavor and texture changes. These enzymes are inactivated by a hot blanch treatment. The chilling process prevents the corn from becoming mushy due to overcooking the starch.

If you take smaller pieces at a time of the husk, when you pull down you can grab the silks and it is waaaay less messy. 😂 however, so much fun to watch yall having fun. I used to help my grandma freeze corn. She had a totally different method. She cut the corn off first then cooked it in a white enamel pan over low heat. Silver Queen only. More than one way...ya all know. Such good memories. You can also use a big knife to whack the end off before husking if you suspect worms.

I am currently watching this video and decided to get online and tell you why you are boiling the corn. You are Blanching it. Look up how to Blanch vegetables for canning or freezing. It stops the vegetable from growing and also helps it maintain the color and flavor of the vegetable, while the ice bath stops the cooking process. You should get yourself an electric knife. It is great for carving meats and many uses actually. Glad you see you are working together and hope you have a wonderful life together on the farm. Don't forget to learn something new every day and you gotta have some fun every day as well. I love watching the Veggie Boys and Stable Life so had to add your channel to my Subscriptions. /Faye from Texas. I do have to tell you I really think your veggies are bigger and prettier than any I've seen in Texas lately. I also paid $4.59 for 1 dozen eggs at the grocery store. We don't even have sweet corn in the store. My mouth waters when I see those beautiful veggies. Enjoy!!

We always just throw the corn into brown paper bags and then freeze. Take out, let thaw and cut ends off. Put into microwave for a short while. The husks and silks just slip off. I am in Georgia where we grow sweet and field corn to eat fresh. You can just grate the corn and freeze. You don’t have to blanch. I think it sets the starch and makes it too starch tasting. A lady near me has people grate and she bags and sells in stores. Has a license to do and she certainly doesn’t blanch. Put heavy cream and butter in the corn when you cook it. Delicious.

The only sad part of this is that huge growers grow their corn and sometimes pack it on site. You can get a 15 ounce can of corn for .50 cents on sale and a freezer bag of corn is .88 cents on sale. Most consumers don't bother to freeze or can anymore since you can just pick it up in the stores. In Ohio, sweet corn was selling for $8 a dozen ears. A lot of people complained about the price and I saw some farmers said they just fed it to their cows since the 400 ears picked daily sat out on a picnic table and no one bought them for $8. What do you think?
