This French cake is an almond-based cake flavored with rum, drenched in a rum soaking syrup, and topped with a rum-infused icing--this is one decadent, boozy cake! Gâteau Nantais comes from Nantes, a port city in France that once received many imports from French Caribbean colonies. This simple French cake was created to showcase those ingredients and is a celebrated part of Nantes gastronomy. If you want to be authentic, make sure to use Rhum Agricole!

This looks delicious! My grandmother used to make the best rum cake and I think her secret may have been a soaking syrup. Great video!

I must have missed something. Thank you! For some reason, the recipe I was able to print differed re: almond flour vs. blanched almonds in the food processor. Have you made it both ways? Thanks again!

Thank you! Last question 😂: I plan to use almonds, but I need to use a cake pan. Do you foresee any trouble with that? In the future, I will make it with a proper springform pan.

@thelittleredheaded1 it should be fine! Just make sure the sides are greased and floured, and put a circle of parchment paper on the bottom of the pan so it easily pops out when you turn it out of the pan. I'm always happy to answer questions-good luck!

Haha! Some of the alcohol is cooked off in the soaking syrup, but yes, this is as rum cake as a rum cake gets!

I wouldn't associate rum with France at all, thank you for the historical background. Btw, in Poland such type of cake is appropriately called 'drunk cake' 😄
