I made this today. It is delicious. Mine's a little different (overnight first ferment, part whole wheat because I ran out of plain flour, and a boule because I can't get dough to do anything else), but the inside is airy and delicious, and the crust is crackly and chewy. It's wonderful. I'm trying to avoid eating the whole loaf on my own.

Wonderful recipe! I make quite a bit of bread throughout the week, this is the first recipe that I've tried with French Bread where it turned out great! Wonderful texture and taste, even my son ate almost a whole loaf by himself lol.

@ The Bread Kitchen. Thanks for the recipe, it's perfect. The polish technique gives far more flavor to the bread. For some breads I add one or two teaspoons of yogurt to the polish, one coffee spoon of sugar and leave it for a complete night, that gives a slightly sour bread like the style ones.

Two things that create a crispy crust - steam and a high temperature. The steam creates a thicker crust and the high temperature drives the moisture from the loaf. Crank up the dial!

I recomend a strong preheat of your oven first! We set our s as as soon as we put our bread to rise. Put s dish of hottp watsr in the bottom of the oven prior to the bake. check your ovens temperaturer !!! Make sure your thermost is correcgt! They sell oven.thermomatures on Amazon. If you cant find one close. Finaly, before you set the bread to bake bush on or spray onsalted water right as youn putting it in to bake. Enjoy!

I am so glad i found your channel, so i jump in and try the recipe. For some reason when i bake it, it looks so pale after 20 mins is done, so i do another 15 mins until the color of the bread is a bit brown, which looks great, but when i try it, the inside is a bit raw, but the outside os ok, crispy and nice. Where do you think i did wrong. I use the oven with frier, i follow the degree instruction, i put water inside. Wait, i did warm the oven for 15 mins before put the dough in. Do you think that would be a reason? I hope you help me, and i will try the recipe again soon

Thank you for the video. I make the bread, the inside is soft but the outside didn't get that hard crunchy crust. I thought I followed how you made it. I put a pan of water in the oven and also sprayed water in the oven on the bread. Any ideas why mine isn't crunchy outside??

***** I put some of the dough in the freezer. I had it in for just under a week and baked it tonight. It turned out a bit denser but it's barely noticeable. Everyone still loves it!
