This is probably the best instruction video for making crepes. I used it today, and everything came out great. And, yes, this seems to be the common practice for making crepes in France. My French girlfriend and I walked through it together, and I asked her at each step, do you do it like this, and she said, Qui, comme ça, every time. Thank you.

This recipe was excellent! I divided it all by three, used oil instead of butter, and vanilla sugar instead of sugar, water instead of milk. Followed everything else to a t. Every bit of advice was helpful. They were so delicious. Thank you for your clear instructions!

I do it almost exactly the same, just add more butter (I cool it down to room temperature) and no sugar. As for the whisking, I put everything at once and just filter it through a sieve at the end. Mandatory flavouring at the end, of course, and that ranging from lemon and/or lime peel, vanilla, cardamom, cinnamon, or whatever I can find. Kids love it, which is the most important measure ☝🏼

The ratios provided here give a more floury crepe. I used these kind of ratios for most of my life, until I stumbled upon the ratios used by Raymond Blanc. He basically uses the ratio of 1 egg, 30 grams of flour, 70 ml milk, 5 gram sugar. The texture you get is more eggy and the colour is a wonderful yellowish one. Try it some day and see if you like it :) Oh, and browning the butter a bit to get a beurre noisette gives the batter a more complex flavour.

Excellent video. This is an absolute favorite since I was young and it is a great classic. We love to make crepes regularly during the year, just served with lemon juice and sugar, wonderful, but for dinner parties Crepe Suzette really let's your frinds know that you love them. I managed to find an old very beautiful wood handled copper pan and a silver service antique silver plate spirit flambé lamp for preparing dishes beside the table. Old School de chez Old School! I use this for very special occasions. Steak Diane, Steak au Poivre, Crepe Suzette etc etc One dessert you should try is Black Cherries and Vanilla Ice Cream wrapped in a Crepe. You just buy a tin of very good quality Black Cherries and macerate them over night in a syrup. You have already made your home made Vanilla icecream, of course! At the table, put the black cherries into the copper pan, with their juice, flambé them with Kirsch, spoon this over a crepe and plonk a nice generous ball of vanilla icecream in the middle before folding the crepe over. Make at least two per person cos they ALWAYS WANT ANOTHER ONE!
