I found out a AWSOME twist on this recipe: when you add the cheese, put a little white wine first and reduce to the right texture. It makes the flavour so more complex and rich!!! It is sooooo good.

Great recipe. When I make a cheese soufflé I use grated cheese instead of flour to dust the buttered sides of the dish and just before placing it in the oven I cut a circle about an inch and 3/4 inch deep away from the perimeter of the dish. This seems add to the rise of the soufflé. Best to you.

MrCougar214 if you thought about the bigger picture, you will find that French people move a lot more than Americans do, they use bicycles as an almost primary option, unlike most of America.. + they try to be in super perfect shape because you know.. who would if they will encounter French women everyday ;)

Fantastic tip for out of this world Bechamel. Before you make the sauce, put the milk in a pan. Add a whole onion with cloves stuck in and a few bay leaves. Simmer and let rest for 30min. Then use that milk for the Bechamel. Ok, I admit this turns Bechamel from a simple fast recipe into something quite fussy. But it's worth it.

For the bechamel sauce: 3 TBSP butter 3 TBSP flour 1 pint of milk salt, pepper, nutmeg 3 egg yolks 1 handful of grated cheese For the base: 4 egg whites 1 drizzle of lemon juice 1 pinch of salt

Thaaaank you Alex! I tried this recipe, just instead of bechamel i used my failed sauce hollandaise, because the eggwhite wasn't used at all ... Awesome. So my eggwhite and even the "hollandaise" hasn't been wasted

Back in the 60's when I took Home Economics, we called this a "puffy omelet." Back then we also used clarified butter (ghee) in pretty much everything.
