This month we are making pumpkin bread found in The Unofficial Harry Potter Cookbook by Dinah Bucholz.
Ingredients:
1 ½ Cups Flour
¼ Teaspoon Salt
1 Teaspoon Baking Powder
1 Teaspoon Ground Cinnamon
¼ Teaspoon Ground Nutmeg
⅛ Teaspoon Ground Cloves
1 Stick (8 Tablespoons) Butter
1 Cup Sugar
2 Eggs
¾ Cup Canned Pumpkin (NOT Pumpkin Pie Filling)
⅓ Cup Milk
Recipe:
1. Heat the oven to 350℉ and grease and flour an 8 ½ inch by 4 ½ inch loaf pan.
2. In a bowl mix together the flour, salt, baking powder, cinnamon, nutmeg, and cloves and set aside.
3. In another bowl, beat the butter and sugar until fluffy. Add the eggs one at a time, mixing until each is well combined.
4. Add the pumpkin and mix well. Then add in the milk.
5. Combine the pumpkin mixture with the flour mixture.
6. Bake for 1 hour, rotating halfway through baking. The top should look golden and feel firm when pressed in the center.
7. Allow to cool in the pan, remove to slice, and enjoy with a nice cup of pumpkin juice!
