For those who don't know; the mangaka for Food Wars consulted with actual chefs when making recipes for the manga (and later, the anime). The main contributing chef was Yuki Morisaki.

After the chef leaves,the writting became so bad that it killed the show and basically make alot of ppl forgot about it until someone brought it up I used to watch it alot due to the food can be made in real life instead of something that only few can make with enough money or non exist

I've never understood food as an art, never understood culinary culture. Cooking is to make food. Food is to be eaten. Full stop. Besides you go to a really fancy, high end place you pay like $40 or more for a little plate of food. I can go to jack in the box and get better tasting food, more of it, for a lot less.

I appreciate the way the main character handled this. Brining out the meat's flavor is the best course of action. If you're hiding the meat's natural flavor then why even use that meat? I've eaten wild game my entire life and I've often told people, if you want the flavor of beef then use beef, but don't try to make wild game taste like beef.

I've never had wild game but I 100% agree. It seems like a waste to try to mask the flavour of something. If I don't like the taste of certain things, I'd simply not use them or eat them.

PSA: When cooking bear, always make sure its completely cooked through, as pretty much all bear meat contains trichinosis parasites. If you eat your bear medium rare, youre going to have a bad time for a long time.

I never expected to see this anime trope explored through food. By only describing the flavors of the two dishes you can already tell who is the villain (By going to extreme measures to reject and bury the qualities of their unique ingredient) and who is the hero (who embraces the difficult traits of their ingredient and works to harmonize with it). Not exactly stretching for an original trope, but certainly the most unique execution of it I've ever seen.

It makes sense because the writers had a chef consultant throughout the manga who was actually designing these recipes. They’ve officially released a lot of them.

@@vancearama except that last (maybe 2) arcs where i think the chef consultant either quit or had other stuff to do, which for me kinda makes sense idk of it was just fatigue on my part for the show but towards the later moments it got a bit too rediculous and convoluted for me including the dishes. I love anime and i work in the kitchen for a living, i loved the earlier parts because all dishes made sense and were believable but very creative but towards the end of the show i kept losing interest more and more

Yeah she went on maternity leave and due to lowering sales, the publisher wanted it to end, so no time to find another assistant. If you notice, the author had to use a lot of previous knowledge in the final arcs and didn’t show too much cooking either. I think the only dishes that might have been finalized before was the final 2 dishes of the series.

Yeah I agree. I did enjoy the final season of the anime for the characters that I"d grown to like but there wasn't that much actual cooking and the dishes weren't doing it for me anymore :/ Still worth a watch in my opinion!

I worked in a deli for 6 1/2 years, and every few months, this old man would come in and ask for sliced ham or whatever, and while I sliced it, he would always tell me about when he was a kid, working in his dads butcher shop where they sold bear meat (and also regular meats). I was pretty excited to see this because I couldn’t imagine beforehand how someone would even prepare bear. Anyway, hope the old dude is doing ok these days, if someone could show him this video that’d be cool lol

Like most game and gamey meat I'd suggest soaking it in milk for a day or two. It really does work. Then marinate it. I do believe the sake Alvin used is made near where my old school in Kobe was. It's great stuff! Chicken Fried anything doesn't use a batter. Usually just a dredge or double dredge, (flour, egg wash, flour and fry).

When cooking/baking any game, I like to leave at least some of the gaminess to taste. Then you actually know what you are eating. But it is also nice to make the gaminess so subdued, you do not know you are eating game; you just notice an unusual flavor, especially with ground game.

I agree mostly. Gaminess isn't really essential to wild game meat, surprisingly enough. Each meat has their own distinct flavors beyond gaminess. Even Deer, Elk, and Moose are different in more than just gaminess.

I like lamb, which I've heard is on the milder side for gaminess? I like a slight gaminess, but not too much. I've had lamb cooked in chinese food that was suuuper gamey, was alright but wasn't a fan, but I've also had a lamb burger which had the delicious taste of lamb and a nice gamey undertone, not too powerful, but enough to taste and add depth of flavor.

almost feels like the way tsukasa cooks would be an episode which focused on procuring the ingredients, because of how he lies the ingredients to speak for themselves with little alteration. I'd really wanna see some of kurokiba's stuff like the lobster curry or eel matelote. ngl, hearing alvin refer to yukihira and hayama as 'the main character' and 'his opponent' made me wanna cry a little lol :')

Give it a shot, there's surprisingly a LOT of culinary techniques in the show. The mangaka had a professional chef as a consultant who created/tested almost every dish on the show! I learned a number of interesting cooking tricks from it. Also if you want a watching partner ChefPK on youtube got his start reacting to it as a professional chef, don't know if the vids survived the youtube strikepocolypse tho.

I agree! I don’t care much for the characters however I find the technical aspects made entertaining intriguing even if the ecchi is distasteful. I have a similar fascination with Kakegurui, which does it with gambling instead. Although there are bizarre nonsensical plot convenient intuitions; the math actually checks out when it is used, Kakegurui Twin incorporating that better.

Yes they do. The anime and manga exaggerate a bit on how the food tastes but everything you see in the series can be recreated IRL. A bunch of food youtubers, BCU included, have already done most of them.

Never had bear meat(no one in my family hunts bear since you have to pay to get something done with the pelt out here and that means you're either spending a couple thousand to get the pelt turned into something or you have a pelt in your deep freeze for a long time while you get the money to get it treated) but I've heard it's an extremely flavourful meat most people out here tend to use it in sausage and cut it with pork to mellow it out

Thankfully, A lot of hunters hunt them responsibly and care about following the “fair chase” rules so the hunting doesn’t disrupt the balance nature Grizzlies used to be a preferred hunting species but hunters backed off once laws let them know it had now become a threatened subspecies and needs ample time to repopulate so now people who still hunt bear have switched to black bear

Definitely one of the more interesting Food Wars and challenging dishes in the series! Now that you've done this, I'm really interested to see how you'd tackle Isshiki's eel hitsumabushi in the Cuisine de Regiment, which involves Kansai-style grilled eel, cheese risotto (with homemade cheese), walnut-smoked garlic chips and a broth made with some mysterious fermented concoction made by Sakaki and Marui

One of my uncles got trichinosis from bear meat. He hunted it himself, so I would guess this meat has an entirely different pedigree. The bear's skin hangs in our front entryway, only showing two conspicuous holes for the entry and exit of the bullet.

Looks great! I haven't seen the show, so I can't speak for the techniques used therein, but if it's "chicken fried bear" in the same sense as chicken fried steak, you'd want to pound it thin with a tenderizer like you're making schnitzel and use a seasoned flour and egg breading

I really thought an equivalent meat would be a substitute for bear, such as beef. But of course I was shocked to learn it was real bear meat; they went extinct in my country in the 5th century BC. (Excusing the fact that they were the ancestors of Polar bears, and some brown bears were re-introduced since.)

The US still has plenty of bears, so thankfully it's not that tough to get them here. Might be a bit expensive since they're not a mass produced animal, but that adds to the charm.

This is among the most ridiculous foods ever featured on this channel, and among the best KZbin videos. I'm obviously never going to make anything like these fried bear or bear burger patties, but it's fun to watch Alvin try to make absurd food while also cracking bear puns the whole time.

"legally sourced" oh right I was so worried you were poaching bears. i think that was the wrong way to do chicken-frying, you'd want to do it pretty similarly to the katsu... no big deal though. this makes for better variety between the two dishes. Just something to keep in mind if you make fried chicken sometime, or regular chickenfried steak.

Fun fact: even in the anime, there is a mention that “competitive cooking” needs to put an heavy emphasis on “punch in the face” type of taste. It’s a different way of cooking.
