This sandwich looks amazing and I can't wait to make them at home. Great attention to detail on the breading, the lettuce, the sauce, and the dry brine. Love it. I'm sure this sandwich is better than anything you can get at a fast food place. One caveat... if anyone is old enough to remember the Chicken Supreme sandwich at Jack in the Box, those were amazing. It was a breaded and fried chicken patty of some sort, with lettuce, tomatoes and two kinds of cheese, like American and Swiss. They took it off the menu without warning and I'm still not over it. I think this sandwich will help. Thanks Brian, you rock.

Made this twice and both times worked great. I've made the buns a half dozen times. I liked version 1.0 just fine, but these are great. I switched to 100g of wheat and 200g of AP. Not as fluffy but I like the flavor. I make five buns instead of six and use them for good size hamburgers. Put sesame, poppy, or caraway seeds on or some good pretzel salt on top. Another great recipe here and great instructions along the way.

When you get the itch to do potato bun 3.0, you can use that excuse to make a hot chicken version of this. Slaw, comeback sauce, hot oil dip, spice shake. Lots of different components that could make for an interesting video. Hot chicken sandwiches are actually a huge trend in LA right now. There are popups in every car wash in the SF Valley at night after they close.

I made the potato buns today. I didn't have a mixer so I did it by hand and it went together easily, from mixing to finish kneading, about 8 minutes. I was prepared for much longer. Very tasty

Don't know what I'm doing wrong with V2.0 Potato Buns. All ingredients measured properly (with a scale). Yeast is active. Mixed properly. Dough looks very good at this stage. Fermented and proofed using proper times but not getting the rise on the proof that I got using V1.0. Have to admit that I'm going to go back to V1.0 from now on. Everytime I've made them they proof bigly like the one's in this video. Just wanted to share. Keep those recipes coming - have made almost every single one of them. Thank you.

Ok. I'm back. Got my food cooking. I really like the order in which you present your recipes. You proceed with the current recipe and when you come to an ingredient that needs to be premade you break to that with a short clip then proceed with the current recipe. So easy to follow without having to keep that other 'thing' tucked into the back of your mind and search for it later, if you remember. Love it. Helps me to mentally construct the recipe and therefore its taste and texture as well.

There was a restaurant in Columbus OH called Bread. They made my all time favorite chicken sandwich called "The Mother Clucker". I think it won best sandwich. It was: toasted brioche roll, buttermilk fried chicken breast, roasted pablano pepper, cheddar cheese, aioli.

It was good. I can confirm. I may triple the cayenne to 15-20g next time since I didn’t taste much spice. I also made the homemade ranch but ended up blending up a whole dill bunch from the store into the sauce which made it more like a zippy dill sauce. It was really good and the chicken was super juicy on the inside and crispy on the outside . Thanks for all your recipes!

Did the potato buns on the 4th, ground up some short ribs and chuck roast from another vid, the potato roll recipe crushed it! Followed the recipe to the T, no alterations needed,the amounts were spot on! You're a beast dude! Tonight I'm going to do a mushroom,onion and Swiss? I'm making those buns and sauce, for sure. I like to deep fry breast fillets that I have split in half (parallell to the cutting board). Before I fry them though, I marinade them for about a day in the fridge, then I put them in a sous-vide bath for about two hours, then I fry. This way I know that the meat is always perfectly moist while also getting a really good crust. Oh yeah, I will also start to put liquid in the seasoned flour, that's brilliant.

I only used the chicken part of this recipe- it was so good! Only I used a dense sourdough bread instead of brioche, because I had that on hand. It was too much! Next time, I’ll enjoy it with a gorgeous brioche.

I've made the bun recipe a bunch of times now and am really digging it with the addition of 1 egg yolk...thanks! As a bread baking nerd, I'd love to see a version of it using a poolish. The squish factor is already great, but this could make them epic! Decreasing the amount of yeast and increasing the ferment time would be great. I love that you state the protein % of your flour, but also knowing whether you use ADY or Instant and unsalted/salted butter would be nice when playing with this recipe. Cheers!

Looks great. The fried chicken looks fantastic. I've made homemade mayo with a hand blender for years, but if you just load up all your ingredients making sure that the oil goes in last on top, you can then bring the hand blender slowly up from the bottom of the jug and the mayo (or dressing) will emulsify perfectly every time. It's much easier than having to try to pour the oil in like you would in a traditional blender. Try it! You'll never make mayo any other way afterwards. 😉

My favorite approach for the chicken is to place all the thighs in the bowl, add one egg white and mix well. Then add generous amount of corn or potato starch instead of flour. Mix well - then deep fry. Lighter and crispier.

My go to fried chicken sandwich uses a 50/50 blend of dijon and buttermilk to coat the chicken and the flour is loaded with lots of super finely ground pistachios. I'm not a huge fan of dill so I make my pickles with mustard seed, allspice and plenty of garlic instead

A potato ricer is a handy tool for more than just super smooth mashed potatoes. It can also act as an excess water extractor from raw items like shredded potatoes, zucchini, or cucumber or squeezing residual moisture from cooked leafy greens such as spinach, collard, beet, etc. Only drawback is that it's awkward to clean afterwards.

I read lots and lots of comments under cooking/baking videos, and there are many more complaints than should ever be posted about the wasteful kitchen habits of Americans. I was raised in a frugal household so I know better, but viewers tend to mimic what they see cooks doing. Good to see restraint

I am ready to make this recipe! Got my flours and butter milk but I am struggling to find fresh chives and dill in my small town so I am wondering what kind of subs I could use to make the dressing!
