Fried Collard Greens and Fried Buttermilk Cornbread Patties

On this video I will show you how my mama and big mama use to fry their collard greens that I've been cooking for years. Plus to compliment those fried collards we need some old fashioned fried buttermilk cornbread patties with that golden brown crust! If you want that Southern cooked collards and cornbread patties from back in day then you are ready for a treat!
Fried Collard Greens
Ingredients:
Collard greens ( stems removed, collards washed, and chopped )
salted fatback ( wash salt from fatback )
bell pepper ( use half, sliced thin or use 1\3 of bell pepper )
1\4 cup vegetable oil
1\4 tsp. baking soda ( or 1\8 tsp. if only frying small amount of collards )
Remove the stems from the collards and discharge. Cut all your collard leaves and wash them at least twice, using fresh water after each wash. Once washed, make sure you transferred your collards to a large bowl and set aside.
Now make sure to wash the salt off your fatback, and go over them with a paper towel to get rid of the excess water. Set aside.
In a large pot add the oil with the heat on medium\high. Next, add your fatback to the pot and cook until brown on both sides. Once done, turn off the heat and remove the fatback from pot and set aside. At this point you can remove half of the oil or a small amount from the pot. ( If you have about 3 or more bunches of collards you can save the removed oil to add back into your collards if you feel as if you don't have enough in them ).
Next, you will turn your heat on medium and add the baking soda to the oil and begin to stir it around in the pot. Your oil should hot and immediately add a heaping full of collards to your hot oil and stir, not letting the collards burn. Once those collards have soften a little, using a spoon, move those collards to one side of the pot. Then add more collards on the opposite side of the pot. Now you would want to move your collards from one side to the next making sure you flip the greens so that the fresh collards have a chance to cook evenly. ( Please watch the video ).
After all the collards are in the pot, cover with a lid and let them cook for about 5 minutes. Stir the collards around fully in the pot and add your fatback and stir again.
Adjust your heat to low and let your collards cook for about 45 to 1 hour. ( I allowed my collards to cook for 1 hour. Plus make sure you turn your collards about every 15 to 20 minutes). If at any point that your collards have no more moisture in them you can add a small bit of water and a little more of the oil you did not use. We don't want the collards bathing in water. If you cook the collards low and slow you should not have a problem with them drying out.
Buttermilk Cornbread Patties
1 1/2 cups stone ground plain corn meal
1/3 cup self rising buttermilk corn meal
1\3 cup all-purpose flour
1/2 tsp. salt
1 Tbsp. sugar
1 3/4 cups buttermilk
1/4 cup vegetable oil
1 1\4 cups water
In a medium bowl add your dry ingredients ; both corn meals, flour, salt, and sugar and whisk together well. Next add your wet ingredients to your dry ingredients; buttermilk, oil and water. Mix together.
In a large skillet add some vegetable oil and turn head on high to get the skillet hot. Then you would want to adjust your heat to medium and pour your cornbread mix in the skillet and form your patties to the size you want. Cook on each side until golden brown.
Now you have your fried collard greens and your fried buttermilk cornbread patties ready to eat! Enjoy!

@pamelaphillips2334 HI Pamela!!! There are two different kinds that have salt on it, and it can really be confusing depending on how each company packages it. I have purchased sone that says "cured" salt pork, and this kind is extremely salty that requires you to boil it and then fry it. Plus, that "cured" salt pork has some lean meat on it. That's the kind that my mother told me not to buy. The kind that I buy at Wal-Mart is called fatback, and it's full on coarse salt on it. It has no lean meat on it, and when you wash the salt off, then you can fry it. This kind is not salty like the "cured" salt pork. There is a difference. Hopefully, you can find the fatback. Google it and maybe you can find it in your area. I know Walmart in Southeastern Alabama carries it. Sometimes, you can ask the manager if they would try to carry it. Enjoy your day!!! 💖💖💖😊😊😊

I'm growing collards, turnip green and purple top turnips this fall. Two of my Grands LOVE collards, even my Italian SIL likes them...................I'm the turnip green gal in the family, love them both. Can make a meal out of either with a pan of crackling cornbread..............

I haven't had any crackling cornbread since I was a young girl. My mama could slam on that!!! I use to tell my mama, "Can I have some boom boom bread?" I love this, this is the way my grandmother and great grandmother cooked greens and corn bread and taught me and I still use buttermilk for my cornbread. My mom taught me how to cook a lot of things but the fried “hot water cornbread” I learned first hand from my grandmother. Great video❤️

Hi Felecia - over here - in good old Germany - the collard green is a typical winter vegetable - when its getting real cold outside - right now - its much to hot and not the time to harvest this super delicious "Grünkohl" - right. So we have to wait another 6 oder 8 weeks until you can buy it fresh from the markets or food stores. May be you will watch a german video about how we prepare our Grünkohl - collard green dishes - we have lot´s of real tasty ones too. I will try your recipe later on, when its time for fresh Grünkohl over here in Germany. Thank you very much for your nice video.

I just wanted to say thank you for talking about the difference in young collard leaves and the big leaves which can sometimes be tough in texture or even bitter. I'm an old school southern way down south cook and even if I don't agree with all of your methods on this dish I can respect your effects, God bless.

Yeah, I know I make my greens totally different and folks go crazy over them. My brother gave me his recipe, and folks nicknamed them crack greens😅because they could not stop eating them.

I really appreciate this video. This is something that my mother would make from time the time. She died last year at 93. Her birthday was this past September 8th. When I saw this video I immediately began to taste something I haven't tasted in a long time. And I would not be able to make this for myself without seeing this video. I'm going to make this with EVO. I follow the rule that the main purpose of food is to transport EVO into your body. With the stems I think I will chop them up and add them to the greens, because before eating, like a condiment, I've always mixed sweet pickles w a dash of hot sauce into my greens and the cooked stems might have a similar bite.

You had me on taking the stems out. Most people don't😱. And the salt pork, OMG, that's what my mama uses. There's nothing like greens cooked with fat back!!!

And you're so right about the fat back cooked in greens. Love your spirit❤ Don't do pork sis, but I definitely remove them stems. I try to leave them in the market, don't even bring em home. Fry em up and lay them okra over in them greens when they're bout done, make them hoecakes and fry bread like my mom and grandma mom taught me. Keep on cooking!!! ❤

I love fried collard greens. I serve them whenever I have guests over for dinner. Most people I talk to about them have never heard of fried greens but they always get rave reviews when I serve them. I'm saving your cornbread recipe. I'm headed in the kitchen right now to fry us some greens. 🏃🏽‍♀️

You really don't have to do all this for collards and they taste really good with smoked turkey or hocks in them. The recipe for my greens after people eat them they call them crack greens Because they keep you coming back😅

@lparsons6924 Yes, you must try it!!! It's so delicious. A have a few friends and family members that will eat it without anything. Plus wrap them in aluminum foil when they are hot out the skillet, and they will stay hot for a few minutes about 20 minutes. I double rap!!! There's no better than hot cornbread patties.

No red pepper, garlic or a little sugar in the greens,u will be surprised how these spices will enhance the flavor!

@judithjackson4140 I have used the red peppers and pepper vinegar in my greens before. I tried the sugar years ago, but I was taught that people add the sugar if their greens were bitter and I don't like sugar in my greens. I found a way to avoid that. My family and friends always love my greens. Believe me, I have tried them many ways with different meats and spices, but my video is about frying collards greens the way my mother taught me. I put a small amount of brown sugar in mines with garlic onion and some other spices that take the taste of greens to a different level. Myy spices even out you can't taste the sugar at all. I don't use a lot of salt😊

My mother would sometimes make these Collards, just slightly different , but not much & she'd make those cornbread patties , it was a simpler recipe but but very good & always with yellow corn meal & no sugar BUT would have chopped onion in them too . When she didn't make regular corn bread , she'd make these & one of the things we'd have with them was Pinto Beans & steam fried potatoes . I haven't had these fried Corn bread patties in years . I really have to make some ❤

Fried greens I've never done them like this but one time i cooked them for hours and they never got tender and someone told me about Baking Soda. And where you find those strips i found them at my local Walmart once or twice i should have bought all of them and put them in the freezer. Sometimes when you have a hard day at work and come home and have a good glass of wine your mind may play tricks on you.............cause i could have sworn i smelled those greens.

@pricebkack5744 😂😅😂 You just made my day ❤️ ♥️ 💕 Yes, baking soda does make them tender. Just don't put too much in them. A little goes a long way. If you have about 4 or 5 bunches of greens, just add a tiny bit more. I bought my fatback at Wal-Mart too and at times I can find some at a Piggly Wiggly grocery store. The next time you do find some just go ahead a get you 2 or 3 packs. It's great that you can relax, enjoy your glass of wine after a long day. If I was close by I would have brought you a plate!!! @lindajones7777 Yes, but instead of frying the collards, you can boil them. My family loves the frying method more. What you should do is wash your smoked neck bones or ham hocks well. In a large pot, add your smoked meat and add water to the pot, just an inch above your meat, and let it cook on medium heat until it's almost meat off the bone. If you have alot of meat stock in your pot just pour some off ia a bowl or cup but don't throw it away just keep it because you might need it whenever the stock level get low while cooking the collards. Remove your meat and set it aside. Adjust your heat to medium low. Now, you will add your collards that have been washed and cut to your meat stock. At this time, you can also add any special seasoning that you like. I myself will add some slices of green bell peppers, a little red pepper flakes, or if you like it a little more spicy, then add a little more. Not too much. Just make adjustments as you go, but it's probably better if you add more at the end of cooking the collards. You can add salt, but I don't add any extra salt because of the smoked meat. After allowing the collards to cook on medium low for about 15 minutes, I would adjust to maybe almost on a low setting and cook about another 45 minutes. Just check for doneness after 30 minutes of cooking depending on how much collards you are cooking in the pot. When you see the meat stock level getting too low, then take some of the reserved meat stock and add to the pot. You don't want your collards swimming in water and not too low where it can scarch on the bottom and then burning. When the greens are about done, then you can add your meat back in the pot. Stirring around and cook until done. Hopefully, this will help. Hopefully, I will do a video on this, but my family and friends love fried collards more than anything. Have a great day!!! 😊😊😊💖💖💖
