Dungeoness head butter tastes so much better with Tabasco because the spicy acidic taste cuts that overly rich bitter tastes. I use to throw it away too but put some Tabasco on it, game changer

If you’re unsure, squeeze the back legs and if it’s soft it’s probably a fresh molt and won’t be as full of meat. Barnacles are also a good indicator of a full meat crab.

Some of best bay area fishing, cooking, foraging, and just learning tips and tricks. @MoreThan Fishing @OutDoorChefLife I'm Hispanic and we don't mess with the head, but Daniel got me wanting to try it now! Matts the trick to making sure that the spices you add are properly infused, make sure you get a meat tenderizer, or something similar and gently crack the knuckles/shell. My wife does this when she makes her own spicy crab boil or her crab in vermouth sauce. Matts would most definitely like this as she add a whole stick of butter to the vermouth!
