Fried Oysters & Quick Mignonette Sauce with Claire Saffitz | Dessert Person
Join Claire Saffitz as she embarks on a trip to Cape Cod, revisiting her parents' home. During her Cape adventure, Claire makes visit to tour Moon Shoal Oyster Co in Barnstable, Massachusetts, to explore oyster farming (Check out last week's video). In this episode, she crafts her own homemade mignonette and tartar sauce recipes. You won't want to miss her demonstration on how to shuck and fry these oysters to perfection. Tartar Sauce
¾ cup mayonnaise
1 tablespoon dijon mustard
1 lemon, cut into wedges
½ cup parsley, chopped (optional)
1 to 2 tablespoons chopped capers, to taste
6 to 8 medium sweet gherkins, chopped
2 tablespoons shallot, chopped
cracked black pepper to taste
½ teaspoon salt
Mignonette Sauce
1 medium shallot, chopped finely and evenly
½ cup sherry vinegar, enough to submerge the chopped shallots
cracked black pepper, to taste
Fried Oysters
Oysters
1 cup flour
1 ½ cup Panko breadcrumbs
1 large egg
2-4 tablespoons buttermilk
1 teaspoon Old Bay seasoning, to taste
4-6 pints neutral oil, for deep frying

When Claire said she was getting her own channel, this was EXACTLY the kind of content I was hoping for. not only are we learning about different ways to prepare the same food, we're learning where the food comes from, we're getting Claire's personality and we're getting a more relaxed environment than during the Gourmet Makes shoots. I have enjoyed seeing how the recipes from the book bake up, but seeing a more free-form video like this is pure joy. Thanks to Claire and the team for making us smile and teaching us things along the way

one thing i love about claire is how real she is, like when she says things like "i could put more pepper but i don't feel like using the grinder anymore". it's great! makes things feel real and not like....overly polished and sanitized, if that makes sense.

Claire and Nigella collaborating would be a dream to witness. I grew up watching Nigella's Show and I spent my college years watching bon appetite and falling in love with Claire's personality and recipes. P.S. I recently made Claire's Pecan Brown Butter Brittle Cookies and it's possibly the best thing I have eaten, it's so much better than a good ole chocolate chip. It's tender yet chewy and crispy, salty sweet nutty buttery and absolutely delicious.

I always love seeing the cultural difference. I've never eaten oysters smaller than the "frying size" oysters because that's just how Cantonese people eat them. I've also always eaten them steamed and seasoned with soy sauce & garlic+scallions bloomed in hot oil.

In Thailand “hoi tod” or fried oysters pancakes are super popular and inexpensive… eaten with bean sprouts for crunch and a sweet and sour sauce for a condiment. Must try! 😊

Love the Cape Cod series, such a pleasant and relaxed presentation of the recipes... felt a sense of relaxation myself just watching you prepare them. Have to say I never considered doing fried oysters at home, yours looked so good, think I'm going to have to give it a try. It would be fun to see similar videos for lobster, scallops, misc. fish etc. in the coming years.

A great video as always! I just had a thought at the end when you mentioned mixing it up with the videos - I would LOVE to see a video about your process of developing a recipe. Like, from initial idea, all the different tests you do and how you decide when it's finished. An more like an extended vlog form, not just a sit down explanantion.

I grew up near New Orleans, and as a kid I would shuck oysters with my dad on the back porch. He would make his homemade cocktail sauce - which was way spicier than I had any business eating at age 8 - and we would sit out there for what felt like forever. I still love raw oysters but living in the Midwest it's not as easy to get good ones.
