Bitter gourd (or karila in the Caribbean) is best fried down with shrimp or other veg. It loses some of the bitter taste but it’s a jacked up SUPERFOOD!!

If you cook okra long enough the slime isn’t as much. Also, here in North Carolina, we bread it and fry it in oil, then add salt. So delicious.

Bitter melon here in North East India we used to slice it into thin layers and deep fry them with onion omg it's so good...the onion pull down the bitter taste abit so it's like a mixture of sweet and bitter taste ..

Where i live, Odisha (a state in India) we boil the okra for at least 5 mins or so. Then take it out just smash it with hands roughly, salt and green chilly with rice. It tastes amazing.
