I’m from south Louisiana born and raised and we make jambalaya on a griddle outside and we call it fried jambalaya. The most common way when making it outside is in a pot with raw rice cooked in the liquid with trinity and meats, but the fried jambalaya version is a good option too and delicious.

If you do a lot of cooking outside like frying fish, stir fry and wok type cooking, you can go wrong with the Matador. I pull mine out every chance I get.
