Fried Rice Vlog Episode 2 - Island Curry Fried Rice
2 cups old rice
1 chicken breast
1/2 onion
1 clove garlic
1 small nub ginger
1 cup peas and carrots, fresh or frozen
2 tablespoons butter
2 pcs fresh basil
toasted coconut, as needed
curry powder, as needed
allspice powder, as needed
vegetable oil, as needed
salt, as needed
black pepper, as needed
A very hot pan is important when making fried rice. The time to heat up the pan varies depending on your environment. Cook safe, and turn down the heat when you need to.
Using frozen peas and carrots are easier for me, cause its already par cooked, and the hot pan will quickly thaw/cook it through. Also, feel free to add more curry or allspice to the dish. A chopped up chili pepper would also go great here, for those who love spice. Add it with the aromatics in the cooking process.
