This is a little ways off the Louisiana or Shreveport style stuff shrimp. Freeman & Harris Cafe is where it started is an interesting history if you are interested in that kind of thing. Which goes back to the 1920's. I was lucky enough to have had their stuffed shrimp before the team broke up and the place closed down. Oh do not forget the dipping sauce.

They have always been in business the restaurant has been renamed under the leadership of the great great grandson. I worked there making the famous stuffed shrimp had to leave for health reason The restaurant celebrated it's 100 the anniversary in 2021 and business is blasting, it's new name is Orlandeauxs Cafe' out on Cross Lake and it is so beautiful and stays packed every single day.

Okay, split Tweedle meter on this one. 2 for PITA prep, and 100 for deliciousness. So that averages to 51, which is damn good. I'm coming over on Wednesday so you can cook this for me. I'll bring some Annie Green Springs Peach Delight, unless you prefer something more sophisticated. That shrimp does look fantastic.

I want a written recipe. I would be better to put the crab mixture in the freezer for about 15 mins before adding to the shrimp. I would also use Italian bread crumbs after the egg wash.
