Frito Corn Salad

Frito Corn Chip Salad
A delicious and super easy to make salad. It’s full of fresh flavor and topped with Fritos to add the perfect crunch!
Ingredients
1/2 cup vegan Mayo
1/2 cup vegan sour cream
1-2 tsps of paprika
Salt and Pepper
15oz of corn
1 small red bell pepper, chopped
1 small green bell pepper, chopped
1/2 red onion, diced
1/2 cup shredded vegan cheese
1 cup of crushed Frito chips
Green garnish, we used jalapeño
Directions
Add the first 3 ingredients in a medium bowl
Whisk well
In a large bowl add your corn, bell peppers, onion and cheese
Season generously with salt and pepper
Add in your creamy dressing mix well
Marinate in refrigerator for at least 30 minutes
Serve with crushed Fritos on top
Garnish with jalapeño or green onions
Serve and enjoy!
