Friuli lies in the very north east of Italy, by the border to Austria and Slovenia. The region is known for its air-cured ham: the Prosciutto San Daniele. Traditional dishes like Toc‘ in Braide made from corn flour with a cheesy milk sauce are being rediscovered. Filippo Bier is the Grandseigneur of a Friulian speciality: Pitina. It is made from lamb and goat’s meat and coated in corn flour.

I love Italian cooking because it uses all types of ingredients and is unpretentious. New World items like maize, tomatoes, squash and potatoes were heartily adopted and turned into world-class cuisine. Viva Italia!

I love this video ! The waters were clear, the livestock clean and grazing in the fields. The geese were cleaning the grounds. Everything prepared had natural ingredients that were fresh and were prepared by what we would call, the old fashioned way. What a wonderful group of people! A blessing to those who are afforded the opportunity to live like this !! This is the way to live! Wish the United States cherished this way of life. Thank you so much for sharing !!! The Italian sense of community is outstanding. I love how they manage to live their culture and draw quality of life from it. Besides, one of the most beautiful languages, if not the most beautiful of all. Love it!

I think I've watched close to 50 episodes already. I love the landscape shots, the close familial ties these people have, their gorgeous and enviable way of life and of course, the food. Thank you for this very informative and beautiful European cooking.

Pestat looks fantastic! Judging by the ingredients, I would guess it's from the Balkans because we tend to do similar combinations of meat and vegetables for the winter, but this mix of carrots, green vegetables and lard in a form of a sausage is just out of this world! Italians always find new way to impress me when it comes to food.

I was fortunate to live in Maiano briefly. got to tour the San Danielle prosciutto place..I LOVE Montasio cheese. I usually don't do dairy products..but can do montasio and parmigiana .(raw milk made) I make pasta like that..and I love making the polenta. This was a delight to see...brings back memories

Wonderful series. @ 13:45; i'm middle of five kids under five years. No, we didn't have a T.V. Dinner was as Mum made it; and it was take what you're given, or go without. Get your own, in other words. Love these shows.

Spain knows food! Best food in the world comes from Spain and Greece, Italy is on a respectable 3'rd place with pizza from naples. Then French on 4'th U.S.A on the 5'th, then Japan on 6'th, 7'th place is difficult but I guess perhaps Iran, China and Lebanon on 8'th. Thai on 9'th too much coriander to place any higher. 10'th place the Suisse. The rest are disqualified for being incredibly nasty! Nasty list: 1'st Korea (dogs and bugs are not food!) 2'nd much of Chinese cuisine snakes and bats and other crazy and potentially deadly and poisonous stuff like gutter oil that no one living thing is supposed to eat. 3'rd Germany (that much fat and salt combined with complete lack of flavour is nothing but unhealthy and absolute filth to eat! Nasty!) 4'th Turkey (have some good kebab not like Greece, but it's ok in lack of good food. The intestines, salty bitter tasting yoghurt *sperm? and all that other disgusting crap they have.. eew! Turkish delight can be a nice sweet, but we're talking food, not candy) 5'th obviously India and rest of asia including Russia.. absolutely horrible food.) 6'th Scandinavia (Swedish meatballs are good, the rest is horrible. Pickled fish and smørebrød eeeeew! Danish so called wiener-bread is nice, but again pastry not really food) 7'th Eastern Europe Germany Poland Ukraine and all the other former Soviet shit nations (potato, cabbage, sausage with kumin seeds... It's all bad and does nothing for the soul. Horrible!) 9'th South America and Africa (same type of nasty super hot disgusting foods like rat stew and flamethrower cooked lamb (dogs) disgusting stews. Eew! Mexican tacos are nice, but I prefer Texas Tacos, some maize (corn) dishes are amazing in Mexico, but most of the food you get in Mexico is ill prepared even at the more exclusive restaurants. So it's a D- grade. D for Disgusting) The rest that haven't even made any list such as Canada and Australia are not worth mentioning.

Right in the beginning it says this region is in the Northwest of Italy, bordering Slovenia and Austria. Slovenia is on the East of Italy. Bravo!

I have always admired the great depth of culture in Italy around food. A few things. The grains, the milk, the meat, some vegetables and fruit, spices. Oil. But a small speciality here, and another there. Something lost here. Something gained there. All over. It's very special. There is such wealth in it. And such a potential for happiness and contentment. And it can be done almost anywhere. People can specialise in much the same way. With their own local foods. I would like to see such passion for food and such a culture in more places.

I'm hearing Friulano for the first time and WOW! They use *very* different idiomatic expressions from "standard" Italian, which is the Italian taught in textbooks and spoken in Bologna (the remaining regions of Italy all have their own dialects.... *all of them* ).

Bologna has its own dialect too, it's a complex dialect with many variants

Friulian is actually a separate language from standard Italian, similar to Rhaeto-Roman spoken in eastern Switzerland. It isn't an Italian dialect. It could be that the people in this video usually speak Friulian to one another rather than Italian

If you come to North Italy, have a taste of seasoned Casera cheese. To me it's better than Parmigiano Reggiano.

14:50 the sisters may not agree on exactly what it is they're going to eat tomorrow. But the one thing that they will agree on, is that they will all eat a lot. I too would eat a lot of their food, as it looks absolutely delicious.

Practically everything is reared/ grown/ stored in house. This is such a humble way to live off the earth. Would these lovely ladies accept a candidate who would learn their art?

Pasta is super easy to make from scratch. The hardest part is rolling out the dough and I see she is using a pasta maker for that part which makes it so easy. make some homemade beef and noodles sometime and you will never go back to store bought. It's just 2 eggs, dash of salt and enough flour so you can roll it. Cut them thin, let them dry for a hour or two and cook in your droppings, adding chicken stock if necessary. YUM!

Countrysides the world over are always the place to be, where the true soul of a culture is found. Urban areas though, the so-called "cosmopolitan" places of the world are just places to try out cheapened and quick versions of many different cultures in one area.

Incredibly beautiful video, so real and satisfying, the taste of this food is unknown to many, not even easy to imagine unfortunately. Just one thing about the commenting voice, which is very appropriate by the way, I don’t understand why he keeps saying “ham” talking about “prosciutto”, he doesn’t translate any other kind of food but the most famous one, even mispronouncing San Daniele (they pronounced it so many times in the video), the last “e” sounds like the one before the “l”...ele... San Daniele del Friuli is a town and we are not authorized to change their name.

What an idyllic life. I run a rat race every day here in the frigid northern state of Minnesota , in the U.S.A. It is alway go go go. Work work work. Never time to take in the breeze or enjoy the taste of farm fresh food. We used to have a family farms. Those are mostly gone.
