What a beautiful video of the snow! It is so relaxing watching your videos. Your voice is so soothing too. Although I can’t eat carbs, they spike my blood sugar, I’m pre diabetic and it is in remission. However, I still love to watch all the bread making videos. Wow, I’m looking forward to trying some of these recipes….i heard that you could make pancakes, but the others seem pretty useful. I’m looking forward to how to make fine flour in my Nutramill Harvest….i was wondering if you just mill it twice, but I am afraid to “Mess up” my mill. Exactly! SD discard should work perfectly in a recipe when you are adding FMF. I started playing with SD 5 years ago (pandemic era) but all the hoopla online talking about having to toss or only make discard recipes with the product removed while growing your baby SD culture really turned me off. Now, I've gotten a good SD culture ready to use and will soon start playing with SD & FMF. Thank you for your practical, common sense information & videos.

I’m going to be baking bread tomorrow but I don’t want to discard any of my starter this time. Do I feed it the same amount I usually do which is 130 grams of water and 130 grams of flour or do I feed it according to how much starter I currently have in my jar? 🤔.

Hi Mary, I really enjoy your videos! I would like to know if you have shared how to convert a yeast ‘sweet bread’ to a sourdough sweet bread. I have a recipe my grandmother used to make. German coffee cake that you flatten out on a sheet pan, sprinkle cinnamon brown sugar crumble topping on it, let it rise, then bake it. It is a recipe that originated before commercial yeast was available, probably the late 1800’s. However by the time my grandmother baked it, it was the 1920s, and called for yeast. I haven’t ever converted a yeast bread recipe to a sourdough recipe, especially addressing the use of FMF. Thank you so much for your down-to-earth videos.

Thank you!! Is it common for fresh-milled flour breads to crumble easier? I've found d that sometimes my loaves bake well but seem to have a looser crunmb. I don't know if I'm doing something wrong, as in I'm not letting it not knead long enough or maybe that's just common with fresh-milled flour.

It does take practice. I think the most likely thing is let it soak a little longer and knead a few more minutes. I hope that helps!
