Jerk Inspired Black Bean Patties
6 servings
Ingredients
Beans
2 cans black bean (drained)
½ onion, diced
Garlic 3-4 cloves, minced
½ jalapeño, whole
1 TBS gochujang paste ( or tomato paste)
Spice blend: curry powder, smoked paprika, garlic, onion, cumin, turmeric powder)
Better than bouillon paste Plus water
Coconut milk ( ½ cup)
Mushrooms, portabella- sautéed and salted 8oz-16 oz
Scallion bunch
Jerk paste ( store or home made) or Jerk seasoning
Fresh thyme bunch
Coconut sugar
Coconut Aminos
Salt
Oat Flour ( ½ cup)
Panko Bread Crumbs
Avocado crema sauce
Avocado
Cilantro
Lime Juice
Coconut Yogurt
Salt
Toppings
Crispy lettuce
Heirloom Tomatoes
1. Saute onions in neutral oil until softened. Add garlic, paste, and spice blend and stir until fragrant. Deglaze with broth. Add black beans, finish with coconut milk and let cook down.
2. Put to side to let cool before mashing beans some by hand ( important because you want to keep some of the beans in tact.
3.Process mushrooms, scallions, jerk paste, thyme, aminos, oat flour until dough like consistency. Best if used in food processor.
4.Combine beans and processed paste. Add salt to taste. Add panko breadcrumbs as needed and as covering .
5.Form circular shaewith cookie cutter, place on cut out parchment paper and place in fridge for 30 minutes to firm up before cooking ( covered with saran wrap or aluminum foil.
6. Sauté in pan with tablespoon of neutral oil on medium heat until browned on both sides.
7. Blend Sauce ingredients for Avocado crema sauce. Top toasted bun with sauce and use toppings of choice and enjoy!

Maaaan, I don't even LIKE plant based food and I'm ready to eat this. That looks amazing! I'm one of those unfortunate people with weak DNA that makes cilantro taste like soap, though, so I'll have to figure out something else for a sauce but dang. Looks fantastic!

@apocalypso3427 awww so glad you like it! Let me know if you wber make it too. Yes I'm the same with cilantro(by itself its soapy to me) but blended with the other ingredients it's great. You can sub it for parsley instead to still get the color

@@ChefShaylaMD I may try it just like you made it to see if maybe the soapy flavor disappears for me as well! When I've had it before, it was always in things like pico de gallo where the flavor was highlighted rather than blended and I'd love to be able to experience some foods with it where I didn't hate the taste. Might as well experiment with this sauce (it seriously looks amazing). I'll be sticking around and watching all your videos for a long time, I think, so I'll definitely update you when I try this one!

Thanks for the video Chef! Is a holding rod better than a knife sharpener? I have a knife sharpener but it doesn’t seem to get my knife very sharp. I also have a glass cutting board which may be dulling my knife.

@KC-KZbinName Hey! You are most welcome! I would say the honing rod helps keep a knife sharp for longer but it's still key to use a knife sharpener depending on how often you use it. You're right a glass cutting board can often dull the knife
