I juice it in a slow juicer, but throw the juice away and keep the fiber. Before I throw the juice away, I let the starch settle, then throw the remaining juice, and keep the reminding starch.

In Paraguay they Made flour and add chesse ti make Chipá. It is delicious! Other way is to make rectangles boild then fried is served with chesse powder

Cassava in our country philippines is a staple food, you have to Peel the skin up to the second layer ,then put it on a basin with water to discard the toxic and wash in running water for 3 times, you can cook it like sweet potato, boil it with water add a little salt, or you can bake it like cake, but you need to put it on a blender,or grate it on a cheese grater and strain in a cheese cloth to discharge the juice, put butter,sugar evaporated milk and condensed milk and vanilla and mix, top with greated cheese, and bake it in the oven 180deg Celsius for 45 minutes.... its deli....and also you can cook it with coconut cream ,add sugar and vanilla and boil ut until the syrup thickens...

That's So cool, there's a great trick to peeling it, if you scar the skin spiraling all the way down the root, you can put it under running water and take it off whole like an orange peel

In Cambodia, we boil it and pair it with coconut milk sauce (coconut milk, salt, a bit of corn starch and green onion) and we also make cassava cake ( coconut milk, egg, sugar and bake ) if you interested in making the delicious cassava cake, you can check out the recipe on my channel.

If you live in Florida try fried yuca or steam but I prefer fried at El Pollo Tropical with there grilled chicken it’s delicious 😋 cassava cake too is delicious there’s tons of recipes in youtube .

Cassava is not bitter but just not eat raw. Soak in water for hours before cooking it. We have plenty of cassava where I came from it’s like potato people eat a lot.

There is many different varieties of cassava.

I'm worried about the species of cassava you're dealing with there, there shouldn't be any bitterness on the varieties you eat. In Brazil we divide it in two variety groups basically, mandioca brava (used only for flower) and mandioca mansa (edible ones with very low toxicity, of you cook it it's fine to eat)
