I love Singapore's Hawker Culture (hope to visit one day). I spent most of my life in Toronto. I wish we had delicious, quality, inexpensive food like this here. I do remember Taiwan's night markets (where I'm from). Who needs expensive restaurants where the food couldn't compete? I adore the food culture of outdoor/street food, especially in Asia.

I think the hawkers centre can still need improvements. Make it more airy and cleaner. The stall space should be bigger. This will made the hawkers less stressed spending so many hours in confine space. Then will the younger generation willing to join in this trade.
