I worked for a steak house with an extensive salad bar. Croutons, pumpkin seeds, and the like were kept in cabinets under the salad bar. Owner/manager told me to restock the salad bar. Opened the cabinets and found all these large cans of pumpkin seeds that didn't even have any kind of lid. Not even saran wrap. Completely wide open. I was aghast. I said to him, "don't you realize this is a huge magnet for mice?" He seemed surprised. They would cut up whole chickens and just wipe their hands and go on to handling other foods. I ate almost nothing in that place. The owner would always get mad at me because I would really cook the chicken and wouldn't rely on just going to the desired temperature, I would go beyond, all he cared about was being able to reuse the left overs. they would pour the bloody water from the boxes in the same sink they would toss their knives in and other foods. One week later he had lost 50 pounds and was unable to eat. We took him to Maryland and he had caught campylobacter. They said if diagnosed fast, he could have been treated but his digestive system was already wiped out. It had to be reported to the state because it's so dangerous (the plant denied his workmens comp claim even though it happened other times). This went on to where he had to have his stomach removed. I know a guy that worked at Tyson briefly and he walked out because of how cruel they are to the chickens. He said forklifts would run over the ones that got loose and we're walking around and guys would take several by their feet and pitch them like horseshoes into a hopper where they began processing. He walked out when he was asked to cover for a guy and saw what he had to do. He ha to feed dead chickens into a machine that shot super heated steam on them to make the feathers come off easy. The only problem was most of the chickens were still alive. A guy fed some in he turned around and left. His exact words were "I would never have thought a chicken could scream. I can still hear it in my head. I've never ate chicken since."

The thing that bothered me more than anything is this: I worked in refrigeration, particularly grocery store cases. In those cases shown the case has a load sticker on the sides of the case. This means you DO NOT PUT PRODUCT above the angle of the sticker because the refrigerated air can't cool the product. One thing that is a problem is it is a sticker, it wears off during cleaning, and different shelves can be added that allow disruption of the air curtain, worse, packaging placed atop the air vents kills off the airflow entirely.

As a cook by trade.... salmonella isn't the type of bacteria when cooking I worry about... because if you know how to properly handle food.. ie don't let any cooked meat come into contact with surfaces or utensils that have come into contact with the uncooked meat prior to cooking ... and as bacteria doubles every 20 mins in ideal conditions ... do not leave any raw or cooked meats out for hours under temperate conditions ie food warmers on a warm bench .. as the bacterial count will be massive 2 to six hours later .. you can just cook it out.. the salmonella from meats ...just make sure the meat is at least 70 degrees Celcius all the way through internally..just make sure you cook the shit out of it :) ..!!. and it will not make you sick.. even if uncooked meats ie pork chicken have it on them..? which 25 to 30 percent of meats do .. I'm way more wary of the bacterial stafloccous aurus in wounds that get into food from a chef's infected finger he's cut or Clostridium perfingents in canned or preserved foods that don't need oxygen to multiply that truly give me nightmares 😢

Even after I recovered, as my body was killing off the bacteria, I then came down with a rare condition called hemolitic uremic syndrom (HUS) which is caused by the e.coli bacteria releasing toxins into your blood and kidneys as it's broken down by the body. So just as I was getting better, I got worse again and my kidneys were being damaged by sheered off blood cells. I was carrying 25 pounds of fluid weight, I was anemic, and needed a second hospitalization and blood transfusions. I never could figure out where I got e.coli from. I rarely cook meat at home and I don't usually eat fast food. The only three possible infection sources I could come up with were produce from Whole Foods or Safeway, or a steak bowl from Chipotle. The whole incident resulted in me being out of work for a total of 4 weeks and two separate week-long hospitalizations. Thankfully I have good health insurance or I would have been bankrupted by all of that, to say nothing for the pain and suffering I went through, and the possibility of long-term kidney damage had I not gone back to the hospital soon enough when the HUS symptoms started setting in...

I’m a food science graduate. It’s very obvious it is really challenging to do this type of testing. The number one thing hammered throughout my schooling has always been food safety. Companies follow regulation and not much else. You also have the problem with people not cooking properly etc. people would be amazed about all the legally amounted things in food besides bacteria. I’m talking literal bits of insect, other debris etc. they have determined levels. When people cheat regulations there are even bigger problems. I’ve worked in several food environments to fast food to real production lines. Sadly food safety is not nearly as much of a priority in practice than i would’ve thought. People would be surprised. I’m more talking the little violations. I’ve never seen just rats running around or shit everywhere etc anywhere. Sadly shit like that happens all the time. What people should know so many people have food borne illnesses and never know. For a problem to become an outbreak or recall speaks volumes to how bad the problem is.

Has the FSIS pursued asking Congress for the power to recall tainted chicken parts? Thanks for a very informative show, FRONTLINE. Jack in the Box was only cooking their burgers to 155F. I know this because an employee friend of mine and I were talking about our jobs, I was trainer at McDonald's, and she worked at Jack in the Box. I told her 155F degrees was to low at temperature, and the burgers had to be cooked higher. And her response was, she was just following her manager' s direction and the Heath department in Seattle rarely visited her store.

Having worked in the restaurant industry for 21 years I'm wondering what kind of food safety these people are aware of. There are temperatures and hold times and handling practices that can eliminate the treat almost 100 percent. Education about food preparation is needed like it was in school 20 years ago.

I wear latex gloves when I cook chicken. I open the pack and either dump the chicken into water to boil or directly onto a pan to roast. I don't cut it raw or place it on anything such as a dish or cutting board. If it needs cut I cut it after it's cooked. I often pressure can chicken but I still boil it first which improves the texture of home canned chicken but also to eliminate possibility of counter space contanimation . I've not gotten sick and want to keep it that way.

Sounds to me like you are taking unnecessary risks. I wear a full biological hazmat suit certified by NASA when I cook or even start to thinks about chicken. I quarantine the city that I am in for several weeks and use a JCB digger inside an ex military nuclear waste transporter to open the pack and then release it from the aeroplane over an un populated area of the Nevada desert or, where possible, directly into the heart of an active volcano. I then execute anybody who is involved in the operation, crash the plane and hike back to civilisation over several days or weeks and then eat a hot dog from a street vendor. I have not gotten sick since adopting these measures. I contracted HIV from unprotected sex with a prostitute several years ago but this in no way involved poultry. IT DID NOT INVOLVE POULTRY!

I was having this conversation with my friend and I mentioned the fact that when I was a kid my Moms and Aunt would share a cow each year from the slaughter house. We had hamburgers stacked in stakes of 10 that when frozen you could use a knife and pry off as many as you wanted. We had Sirloin steaks, and T-bone steaks with applesauce for breakfast sometimes, or a double or triple decker cheeseburger. To this day I eat very little beef. Maybe a beef stew 1 a year, but never steak. My last steak was in 1991. I mentioned how it’s kind of strange that with the amount of meat Americans eat there’s never an incident of Hoof and mouth disease. The government hides a lot from the Consumer. With this being known about the Chickens I think of the Folks in African Whom have lost the opportunity to raise their own Chickens due to them being “forced” to buy from European countries or the US. Here in Germany they sell the parts that are less eaten to Africa which resulted in the collapse of their Poultry industry. It’s cheaper to import than it is to produce their own. The fact that the frozen poultry is sold in the market where there’s no refrigeration, and thawed out in the sun, has to spread the Salmonella rapidly. Because of Corruption or the fact that nobody cares, the meat isn’t controlled for diseases because its frozen and the shippers are in essence poisoning their Own Folks with European junk. It’s the leading disease after Malaria which stands to reason when the meat at the market isn’t refrigerated. Slowly the land is dying because of not being able to produce their own foods and having a dysfunctional infrastructure. I suppose the pilfering of Africa will stop when it no longer exists? Until then the World will continually to Rape her and the Government will continue being her Pimp.

Africans simply don't care about this anyway and multiply like rabbits. And they are generally happy people. One can not compare or judge them by western standarts. I have been spending more than 3 years in several african countries and another 3,5 years in the Philippines ( where they have their own factory farm chicken industry full of antibiotics and growth hormones, but also very low hygene standarts) Almost every family has their own local breed freerange chicken, even in towns, but they also consume europes leftovers, so what ? Travell around Africa before you copy those fairytales of the leftist media.
@nunya___ Жыл бұрын
It is a very real issue but it's one the African people will have to solve. If other countries go in with military and force these changes...well that's colonialism. Buying raw materials and such is not "raping", it's economics. Exports help countries pay for the things they need to grow and prosper but even in democratic countries with robust economies people suffer injustices. The poor/weak will always suffer at the hands of the rich and powerful or the cruel and evil.

African consuming a traditional, high vegetable and plant diet, have just a small fraction of western diseases typical in the world. Its' humans consuming animal flesh and other products that has made us sick and unhealthy. The average american adult eats 265 pounds of flesh every year, thats' double what was consumed in the 1900's. As countries become wealthier, their eating of flesh increases, as does the high rates of cancers, diabetes, heart disease and so on. I write as a whole food ethical vegan of over 25 years.

@@Herzog-II maybe stop being a bystander to the cruelty and damage done by animal agriculture. Carnivores eat other animals out of necessity - humans don’t have to. It is the position of the Academy of Nutrition and Dietetics that appropriately planned vegetarian, including vegan, diets are healthful, nutritionally adequate, and may provide health benefits for the prevention and treatment of certain diseases. These diets are appropriate for all stages of the life cycle, including pregnancy, lactation, infancy, childhood, adolescence, older adulthood, and for athletes. Plant-based diets are more environmentally sustainable than diets rich in animal products because they use fewer natural resources and are associated with much less environmental damage. Vegetarians and vegans are at reduced risk of certain health conditions, including ischemic heart disease, type 2 diabetes, hypertension, certain types of cancer, and obesity. Low intake of saturated fat and high intakes of vegetables, fruits, whole grains, legumes, soy products, nuts, and seeds (all rich in fiber and phytochemicals) are characteristics of vegetarian and vegan diets that produce lower total and low-density lipoprotein cholesterol levels and better serum glucose control. These factors contribute to reduction of chronic disease. Vegans need reliable sources of vitamin B-12, such as fortified foods or supplements.

AKA as " stomach flu" than any Id EVER been in my life. The person with me, ate something else ( Fish) and never got sick at all. No one else in the house got sick with anything. I was so weak and sick for days that I had to re- schedule my flight home, costing me about $500 more than my round trip ticket , because I was too dehydrated, and weak to travel out the front door, let alone fly back home. I had nit eaten in a McDonalds for over 30 years before that, because prior whenever I did, I would have an upset stomach for a day or two afterward. It didnt take me long to learn to be VERY careful about eating out ANYWHERE. I live in a small town, rural area in Kansas. " Growing you own" in both meat & vegetables is very common here. True " Free Range" chickens do not have all that fat, and are not processed the way those huge chickens in the store are. Same with buying a steer once a year. You know what you put into them.
