Thanks for sharing your meal preps with us! What I notice is that you have focused (intentionally or not?) on 1/2 the plate being vegetables, 1/4 is protein and 1/4 is starch for the most part. Your sharing inspires us that yes we can eat very healthy on a budget! This style of eating is exactly what is recommended for diabetics (we are both diabetic) and those wanting well balanced nutrition. Thank you Jane and Mike!

What great meals! This week we had cottage pie, split pea soup with sweet potatoes, chicken shawarma with salad and tahini, veggie omelet with toast, I also made chocolate cake with almond flour. Today I am making pasta with beans, baked sweet potatoes and delicata squash, sautéed cabbage and carrots and a salad for the weekend.

Everything looked delicious. We had a delicious slow cooker potato soup for 2 meals, a low fat chicken Alfredo, a venison vegetable stew, and an Italian sausage vegetable soup. I think tomorrow will be fajitas with Spanish rice.

Loving the recipes. I will give the salmon dressing a try this week. We use the “leftovers” for lunches the following week as we do a 14 day rotation. This way we feel that we have different meals.

Thank you for your videos, Jane, I always look forward to them. This week, we made minestrone soup, for one meal we had grilled chicken breast in it (had it already cooked and frozen) and another night we had premade meatballs in the leftover soup. On another night, we had a sausage pizza (thin crust) we bought for $3.19 at Aldi and put tons of veggies on top. We also had an Indian-style vegetables (I add garam masala and hot curry powder to cauliflower, onion and potato and cook it in the crockpot. I make it nearly every week. Lastly, we get a $5.49 ravioli from Aldi and I made a bake with pasta sauce and top with mozzarella and a little parmesan which lasts us 2 meals, served with salad.

Love all your recipes, Jane. You could be a chef! Keep showing us more for inspiration. I made a quiche, this week for our breakfasts, pulled from the freezer our batch made chili for 2 days, our chicken soup, for 2 days and I have a loaf of bread in a breadmaker rignt now. 😂

Wonderful meals, well cooked, it’s the best! Thank you for sharing with us. I will make your lemon sauce for the salmon. I make a soup with pasta: "The Pistou soup", traditional of Provence, made with only summer vegetables (tomatoes, zucchini, green beans, beans and pasta). Of course, before serving, we add the "pistou" (a mixture of crushed garlic, olive oil and fresh basil). With toast, it’s divine!

We make a mayonnaise sauce that dates from the 1950s when, in general, food “ate” up a higher percentage of a family’s income . 1/2 tsp mustard mixed into 1/3 cup mayonnaise. Add 1/4 cup milk, 1tsp sugar and 4tsp vinegar. Blend and heat. Husband just loves this over steamed cabbage wedges.

Your meals look delicious. My frugal week has been : creamed eggs on toast because hubby undercooked the eggs for egg salad. Having baked ziti with all of the bits of cheese in the fridge. Leftovers for lunch are taco's. Great video

I made salmon cakes using 2 6 ounce cans of salmon. I added 1/2 cup of GF bread crumbs, 1 egg, 1/4 cup mayo, seasonings and fried it in a bit of veg oil with GF macaroni and cheese and salad. We ate this two nights for dinner.

I think I make lasagne soup this week. Some home cooked meals from scratch: nasi with omelette, vegetables, peanut sauce. Mashed potato with sauerkraut, raisins and a vegan burger. Bean salad with tomatoes, onion, feta, eggs and boiled potatoes. Hawaiian Rice. Jewish carrots (tzimmes), Rice, baked potatoes and chicken breast.

The soup looks delicious. We eat similarly. Where you lean more British we lean more Mexican. Shredded cabbage on a taco shell with leftover chicken or roast beef. Homemade beans cooked with onions and jalapeños topped with cheese. Taco salad with avocado. Maybe some homemade aioli sauce drizzled over whatever we’ve made.

This week we picked up a large cabbage, so we made a big batch of cabbage rolls. For the two of us, not only did we get 6 dinners out of it, but we have enough leftover for soup, or to go with Perogies and sausage.

I don’t ’meal plan’ at all. Inspired by your creations, and find I do similar. I go through phases. Recently I have made Haluski several times, as I’ve had enormous cabbages to use up, and it uses lots of buttery cabbage, and is utterly delicious ! Lentil patties too with a tomatoey sauce. Veggies and potatoes but of course. I tend to shake them cooked in the pan rather than mash them up. Rustic looking and easy. It always looks great arranged on nice plates doesn’t it ? Easy to pick up lovely odd plates in the charity shops.

FRICADELLE RECIPE for 4 persons: INGREDIENTS - 750 grams of ground meat (from beef, veal, pork..). You will use pork or beef for half, and the rest of poultry if you want. - 45 cl of milk, - 250 grams of bread crumbs, - 2 beautiful onions, - 2 eggs, - a little flour, salt, pepper, ground nutmeg, a little oil. PREPARATION - Fry the chopped onions in a skillet, gently - Soak the bread crumb in a bowl with milk, then drain the bread crumb by pressing it into your hands. - beat the eggs - Mix fried onions, soaked bread crumbs with minced meat, beaten eggs, nutmeg (two-three pinches), salt and pepper (same measures). With this mixture, you will make shapes of sausages of 2cm in diameter for 20 cm long, or in the form of a ball flat. - You will roll these in flour, egg yolk and breadcrumbs. Finally cook the fries in the frites fat or in oil so that they are well browned.

would you please provide the bbc recipe for the pulled pork/roasted pork? I'm making salmon patties - no bread crumbs but almond flour so they could be ok for both of you. I add some minced sauteed zucchini onions to them before pan frying. They freeze very well.
