When I was a child, I liked to eat, cooked beetroot as a vegetable with my supper, but then our family moved across the country and went to a potluck. I helped myself to some beets, and discovered that they can be pickled. It was such an unpleasant surprise, I haven’t eaten any since.

I love beetroot, roasted, pickled and boiled but have never tried it for soup so I'll give it a go. I've been filling my freezer with soup lately, curried marrow, leek & potato and roasted squash are firm favourites 😁

I used to make beet root and fresh orange juice with ginger. So healthy and delish! My husband will not eat beets, so I did not have to share. 😊

Try a squeeze of lemon and a sprinkle of chilli flakes on top of that soup..... In Turkey fermented turnip and beetroot juice (salgam) is sold in litre bottles as a health food.... my stepson used to drink it all the time .

Had leek and potato soup no milk or cream. We had bagettes with it. Also love celeriac soup, dont like betroot. Enjoyed the vlog.

I love potato and leek soup. I don't bother putting cream in because the baking type potatoes I use thicken the soup beautifully. You beetroot soup looks tempting 😜 Angie ❤

I love pickled beets in salads. They're made sweet here, so wonder if it's different than in the UK? I grew and canned some pickled beets many years ago, haven't had much luck with growing them since. Not a soup but I made a small test run yesterday of honey roasted parsnips and carrots. I also added a turnip I had in the fridge. Just those things with some parsley. It was pretty good. I was trying to find a new side dish for Christmas dinner.
