1 gram of Agar Agar for 100mL of fruit juice. Sugar is optional ;)

​@YouLab does that include lemon juice? I heard from another video that you would need more agar agar for citrus fruits than you would for other fruits. Or did the same amount of agar agar work for the lemon? I saw it another video where lemon caviar was put on salmon and I would absolutely love to do that! ...of course without the sugar, in that particular case.

Quick question about the vegetable oil you use - if you make a lot of the same fruit pearls over and over, let's say orange, and use the same oil, does the oil become infused with an orange flavor? And, if so, what could you do with that? Oooo or lemon infused vegetable oil. Makes the mind wonder. Ideas please!

I used the same oil for the 4 fruits, I didn't noticed any flavor from the lasts fruits. Of course I didn't taste the oil, only pearls fruits.

Hi, thanks for posting this! Question: Juicing the lemons or oranges for the caviar is obvious, but how are you extracting the juice from the raspberry and kiwi since they more pulpy and fibrous? Do you just puree the fruit and add water? If so, how much water? Thank you.

The description mentions this is a vegan-friendly recipe. Well, you have to skip the fromage blanc, which is a milk-based product.

i thought they´re like those popping boba pearls but i made them yesterday and mine didn´t come out as aspected. They were hard inside so they didn´t pop at all..... is it supposed to be like that or did i just do sth wrong? is it possible that i need to use less agar agar or sth like that or aren´t they supposed to pop at all?

I made this with fresh lemon juice and the spheres appeared to form well enough while I was dropping the mixture into the oil but when I strained them all out through the sieve they all lost their shape and turned into flat mush. Any ideas? Thanks!

I recon the agar only set on the outside and they poped when you washed them.. try messing around with the time, squeeze them between your fingers to test for done”ness”

I mean, leave them in the oil for longer, and test them at intervals of about 2 mins

After 3 days in refrigerator it still looks good and tasty. I would not recommend more as it is made of fresh fruit.

Is the juice warm when you drip it into the oil? If yes, how warm? If no, how cold? ;)

Juice is warm at this step. Because when cold, the juice becomes solid. It should be around 40 to 60°C

It depends on the fruits and your tastes. For lemon I prefer with half water half fruit juice. For orange I prefer pure fruit juice. The stronger the fruit is, the more you put water.

It has to be cold I ordered the flavored agar agar to gel instantly. Hope this helps.

Bowl is filled of water, it is used to separate oil from pearls. Oil will go on top of water whereas pearls will dive.
