When you make it again, use breadcrumbs. They absorb the moisture and also provide a lot of binding functionality, as well. You'll basically be making a fruit tart bread pudding that way, and it should be delicious! Also, you could definitely bake it in the toaster oven. Put it on 200 and give it time (use an oven thermometer), since what you're really trying to do is get it up to a uniform safe internal temperature. You also usually cook things at too high a temperature in there; 200*F is 93*C, or just below the boiling point of water, while 250*F is 121*C, or about 21*C above the boiling point of water, to give you an idea. Once you bake them you can give them a pan sear if you really want to crisp up the skin.

The more I think about these desert sausages, the more I wonder how baking a sausage with raw dough/cake batter in it would turn out. It would obviously burst if you filled it too much but if you got the ratio right so that it only expanded enough to fill the casing, you'd lay the groundwork for pastry sausages

I think adding some meat will help it a long way, sweet and savoury is always a great combo plus I imagine it'll help with the texture getting some protein in there, and as others have said, breadcrumbs may be a solid option.

I enjoy that Ms. Sausage must live in a constant state of anxious uncertainty. "Oh! A dozen roses! I truly married a romantic." She might say. But as all things when we grow older, we see patterns. Patterns which lead to forlorn truths. After the third time she began asking.. "Oh! A desert box with all my favorites. On valentines day!" The smile graces her face only for a few fleeting moments, giving way to the sorry inklings of a frown. "Is... is this..?" But she never finished her question. "TO THE GRINDER!" she hears from down the hall. Another reminder that, as all things in that home will eventually, that gift was bound only to become sausage.

This almost reminds me of Scottish fruit pudding. Which could give good suggestion on how to make something like this workable in future. Rather than cornstarch, they use oats and beef suet as a thickener. Never seen one burst in my experience.

You should try steaming sausages that can burst. It’s common for Louisiana boudin, that is stuffed with rice. No crispy skin but it’s still good !

Man, that Let's Sausage was magnificent, probably your best yet! Out of all the episodes that I've seen (which is all of them), I can't think of a better one. Pair that with the 5 on the Ruffalo-Blow-Scale and the frankly alarming final product, and I'm pretty sure this is one for the ages! It's definitely cheaper than the $2bn lobster sausage, and much less work than the Guy Fieri 100-Step-Nachos-sausage.

Obligatory suggesting of Ox Tail Sausage. Pan sear them first, for delicious reasons, before slow cooking (or similar) them until super tender! (Also, unless you don't mind paying full price, I'd suggest either waiting for them to go on sale or check to see if any butchers have them "cheap")

If there was ever another attempt at this I'd say that you should try adding ground-up graham cracker to the mix to thicken instead of just corn starch. That would absorb moisture and add stability.

If you attempt this again, start by grinding up the tart and ditch the corn starch, use the dehydrator instead. Mixing the dehydrated tart filling with pork could be great, just as pairing pork and most fruits is great.

You should put it in a pan on very low heat after the grinding to make some of the liquid evaporate, instead of adding stuff like starch. And when it reaches the desired viscosity, then you should turn it into a sausage.
