He made Sautéed onions not caramelised though lol. Caramelised onions take wayyy longer over, & require a more moderate heat. If you're patient they will still be deeply browned. But I do agree most foodtubers carm onions are shite

Trivia: In Australia, when you vote in elections, there is usually a BBQ outside where you can get a sausage on a piece of bread, with well-caramelised onions. We call them "Democracy Sausages", and they're usually run by local schools, community groups, and charities who sell them to raise funds. Kinda like a bake sale, but far more delicious. Even though voting is compulsory here, it's considered "Un-Australian" not to buy a democracy sausage on election day.

If you ever do the onions like that again, a tip is to cook at a lower temp and to put in a bit of water if some looks less cooked than others. Yours look like you took them a bit too far and some got burnt

Yes, that would help 'set' the filling and prevent the skin from bursting. (assuming the sausage is stuffed with actual meat or something that will firm up when it cooks)

It Could be. Could also be the perforating tool tearing the casing, or not allowing the sausage time to "cure" and dry in the fridge which would make them crisper and not gummy. Could be from mishandling the casing...natural thin spots or just the wild ingredients reaction to it breaking them down. I'm not a sausage expert so don't know the break rate ratio, but it seems to happen frequently. Baking them would be my suggestion...

If you attempt this sausage again, to make better carmelized onions you should add like a quarter teaspoon of baking soda as it raises the ph and aids in the chemical reaction that causes caramelization, I would also recommend using a lower temperature, it makes them really soft while keeping them from burning.
