Hi guys! I hope you enjoyed my video!
Followed recipe of a Full Brazilian Dinner for 3-4 people
Roasted Chicken (Frango Assado)
6-8 Chicken thighs or drumsticks
3 tbsp of mayo
1/2 tsp of garlic powder
1/2 tsp of salt
Black pepper to taste
Paprika and garlic powder to taste
Preheat the oven at 350°F.
In a bowl combine mayo, garlic powder, salt and black pepper (to taste). Mix it well and add the mayo mixture to the chicken. Rub into the meat, then place the chicken in a roasting pan. Sprinkle paprika and garlic powder over the chicken to add some color and flavor. Take roasting pan into the oven and bake for 1:30 hours.
Sautéed Green Bean
1 bag of green beans, rinsed and trimmed
5 cloves of garlic
1 tsp of salt
1 tbsp of unsalted butter
2 tbsp of vegetable oil
2 tbsp of water
Pepper to taste
Using a mortar and pestle, smash the garlic with salt until becomes a paste. See note If you don't have a mortar and pestle.
In a pan over medium heat, add the oil and garlic paste. Sauté for a minute, then add the green beans.
Add the water and cover for 5 minutes. Let the water dry, then add the butter and pepper to taste (add salt to taste if you didn't add salt with the garlic). Cover it again, lower the heat to low and let it cook for another 5 minutes.
Check to see if it is soft enough for you taste.
White Rice
1 cup of white rice
2 tbsp of vegetable oil
5 garlic cloves
1 tsp of salt
Plus salt to taste
Water
Using a mortar and pestle, smash the garlic with the salt. If you don't have a mortar and pestle see note.
Rinse the rice over cold water.
In a saucepan over high heat, add the oil and the garlic paste. Sauté for a minute then add the rice. Sauté rice for another minute.
Add enough water to cover 1 inch above the rice.
Add salt to taste
Bring to a boil, when most of the water has evaporated, cover it and reduce heat to simmer.
Simmer for 30 minutes or until rice is soft and fluffy.
Creamed corn
1 cup of whole corn, divided in half
4 tbsp of butter
2 tbsp of flour
2 cups of milk, divided in half
Salt and pepper to taste
In a blender combine 1/2 cup of corn with 1 cup of milk. Blend it for a couple of minutes.
In a saucepan over medium heat, add the butter. Once butter has melted, add the flour. Stir continuously until flour is dissolved.
Add remaining 1 cup of milk, stirring vigorously. Once the flour and butter is well mixed with the milk
add corn and milk mixture. Stir it for a couple minutes, then add the remaining corn. Finally add salt and pepper to taste.
Keep stirring until becomes a cream.
Remove from the pan once it's ready.
Enjoy!
Note: If you don't own a mortar and pestle or a garlic press, mince the garlic and carefully crush it using a wide knife (like a chef knife). Add salt to taste throughout the cooking. I only add salt while using a mortar and pestle because it helps to crush the garlic.
