im putting 18x9.5 +38 rays gram lights 57dr on my 2003 and im trying to decide if i can fit a 225/40 or if i need to go 225/35. runnin tein flex coilovers so front camber plates will be maxed. only gonna have rear camber bolts in the rear and all fenders rolled if need be. do you think 225/40 would be too much?

Yes. It take into consideration it costs money to fix it so leave it stock and save your money for repairs. And with Subaru some simple repairs for other vehicles become quite a hassle so they can be hard to work on if you don't have experience. So have a good but of money saved or know how to fix it
