I would call it a FZ1S to a FZ1N conversion., A rebuild would be building the bike up to it's original condition/looks. It's nice to see that you are still using OEM parts. Did you check the frame for cracks?

@@MotoTwinsGarage It's not about the damage to the front from the crash. FZ1 frames tend to crack at the welding point under the fuel tank as a manufacturing defect, common issue on 2006-2007 model years. Usually starts to crack from the inside out.
