The yellow root he was grinding was fresh Turmeric root. I believe that was a turmeric field behind him. They rub it on the skin and let it rest for a bit, then wash the meat well. It gets rid of any smells and also destroys most of the germs, etc. before cooking.

Adding to the above. We use turmeric as a natural antibiotic and helps control cancer. Turmeric is one of the important ingredient in most of our recipies.

Sorry if someone already brought this up but a couple of common food names in English that differ between India and the US - 1. "Coriander" - this is the same thing called Cilantro in the US. Fresh leaves, powdered dry leaves, and powdered seeds are all used. You can call it "Coriander leaves" or "Coriander powder" to distinguish, but its Coriander in either case. The word "Cilantro" is not used in India. 2. "Curd" - this is just plain whole milk yoghurt (could be either cow OR buffalo milk), not to be confused with what is called "cheese curds" in the US, which is unprocessed milk solids remaining after the liquid is removed during cheesemaking. It forms the basis for marinades for meat dishes in Indian cusine, the same way we use olive oil.

They are frying in what is called Gigelly oil in the south of India, and Til oil in the north. It is Sesame oil. Sesame oil has been grown and squeezed for over 5,000 years. I believe it was the first cooking oil. The difference between Yogurt and Curd is that while Yogurt is made by using bacteria that ferments the milk and Curd is made by adding a squeeze of lemon juice or some other acidic juice to curdle the milk. The curds are separated from the whey (the watery liquid) by putting it in a cloth bag and squeezing and hanging. People drink the whey too. It is refreshing. "Little Miss Muffet sat on her tuffet eating her curds and whey..." This is the true "cooking from scratch". All of the fresh ground spices, herbs and roots, home-made curds, home-made cold pressed oil, from everything grown in their fields. Growing up I remember my grandmother and aunt buying fresh wheat, drying it out in the sun on a sheet on a cot. When it was dry enough it was taken to an ox driven flour mill where it was ground between two giant round wheel shaped stones. That type of grinding with stones produces true whole grain flour that we make Chapatis/Rotis from. Squeezing the wheat between two steel rollers pops out the white kernel which is ground to make white flower. The whole wheat flour we buy in the stores here in the US involves adding back some of the outer skin that was removed plus molasses. It is not the same as true whole wheat and does not have the flavor and nutrients of the real thing.

They didn't ground up chicken feet😂 actually it is dried turmeric. Turmeric is a very essential ingredient especially in South India. The purpose of adding turmeric is, actually turmeric is a natural antiseptic medicine. If you mix turmeric in food what it will do is, it will neutralize all the harmful elements in the food items and keeps you safe from all kind of germs or other foreign substances harmful to your body.
