I think you're forgetting the connection between the Homonculi and the philosopher's stones. Lust pretty much explained it to Havoc and Mustang: The Homonculi are made from the philosopher's stone. It's their core. And as you learned through Ed and Al's researcch the philosopher's stone is made through human sacrifices. Lan Fan is sensing the stone inside of Gluttony and the many souls within the stone.

Regarding anime subtitles in general, I think most of the time official translations only do one set of subtitles (for translation) which is why it doesnt match up with dub (which often changes a word or 2 every few sentences)

I don't know about you, but I find these subtitles annoying, especially with this version with the slow fade-in of the words as the charactera speak. Why not just get rid of the subtitles altogether? The characters speak clearly. And if you're afraid you'll miss out on certain lines, you're already missing out on certain lines since you talk over them many times.

Do you watch the discussions? They explain less than a minute after the episode ends, that the subtitles are for people who need them. And that where Crunchyroll doesn't have subtitles, they will use these auto-generated ones. "Don't let perfection be the enemy of the good" All I can say is: Get over it. This isn't about you, it's about trying to considerate to the people who need it.
