@morpheus wow dude!!! Never heard your voice in its actual tone and volume. This is mindblowing haha. I'm actually a chef from MA, check out Heston Blumenthal on his "triple cooked chips" for the technique all the michelin star restaurants use for fries. You can def do it in 2 steps as well.. Blanche at a low temp to parcook, freeze completely on a rack, fry at a high temp for crispness. Hope that helps!! You absolutely rock and I would love to drink a beer with you sometime haha.

I used to make sure to wash my cut potatoes with plenty of water to get rid of the excess starch then do the double fry method and my fries would come out pretty crispy! So nice that you’re having fun with this, love you so so much! God bless you and your health and well being❤️

Put some apple cider vinegar on those fries! Yum!! I usually just fry them till they start floating then watch the color and make them done when they look good to me.

Love it! Would love to see you cook more with it. Does the oil need to be stored in the refrigerator between uses? How does the oil get disposed of? I’d love to have a deep fryer but they intimidate me haha.
