Layers of soft yet chewy carbs, tomato sauce and subtle creamy sauce... Sounds like lasagne to me! You could dehydrate the zucchini slices so they become a little tougher and absorb some of the oils and juice out of the sauce just like pasta, but I really don't see the need for that...

It is missing cheese but I enjoyed it anyway. I sliced the zucchini and then salted it and set it aside for an hour. Then rinse really well and don't use any other salt. That way the zucchini does not turn to mush. It is really good.

allieskellington that's y dehydrate the entire thing for 12 hours to remove the liquid. Her book says to freeze it for 2 hours. Worst mistake I ever made. So dehydrated it

I loooved this recipe. But I will say that for me, I had to use the dehydrator. Sorry. I know Kristina tells us "fresh is best". I ate a bit of the lasagna, and it was just okay. I let it sit overnight. The next day I put it in the dehydrator about two hours at 115 degrees. Yum! Excellent! It just seems that letting it sit and then using the dehydrator just merged all the flavors together in such a pleasant way. And I sprinkled sea salt and nutritional yeast on it. It was not just okay anymore, but very, very yummny. Maybe I have a ways to go with my raw vegan palate, but I'm makin' it happen.

Shelby Maberry Yes, many raw foodist dehydrate, but many try to refrain since "fresh is best". As long as the food is not cooked over about 115 degrees, it's considered raw. Usually you can do that low on a dehydrator. Regular stoves don't go that low.

Vitamix will actually heat up the mixture when you blend it long enough. You can make a warm soup or sauce. If you desire, you can add a bit of hot water to the mixture.

The point is to get the raw foods to taste as similar to other foods yo might have eaten before you were raw- and often they do taste the same, most of these recipes are really good. I am not fully raw but I enjoy raw meals and her recipes are great for that, also for food inspiration.

Richuoisity can't go over 110 degrees or the raw food police will get you.. aha..over 118 degrees is considered cooked.. to be truly raw must be 118 or under..their rules,not mine.. (wonder how many times they accidently went to 119 degrees and didn't know it lol)

For those who have never tried it, let me tell you something... i haven't tried this particular recipe, but I've made raw lasagna several times before, using raw cashews instead of pine nuts, and it's delicious!!! Raw pastas are equally delicious. These recipes are dense in nutrients and flavors. I'm not raw vegan, but I love eating raw as often as possible.

I'm pretty positive that these vegan recipe videos are not to make a mockery out of the anti-nutrient dense originals; I get the impression that they are for those people who feel like they are losing by changing their lifestyle and dietary habits & to show you how to let go of those boundaries associated with the way that we eat. I used cashews instead of Pine Nuts and it was fabulous!! Also, watch for moisture overload! After I cut a few pieces from the pan, I carefully dumped out so much liquid! I then used paper towel to absorb what was left over a period of several minutes. It made the lasagna, less watery and firmed it up. It was delicious!

I mad this for my family. I'm not a zucchini girl bit I made it anyway. my kids hated it. lol. but they're 13, 6 and 8.😊my husband took one look at it when he got home and said NO WAY!!. but tried it anyway. he loved it. had it with some chips😁. we're not raw but I like to try new things. I finally made this and it was delicious!! Without the pine nuts because I didn't have them on hand. Next time I would make more sauce, use lots of basil, and make the bottom layer thinner because I like more sauce-to-noodle ratio. I love having a way to use up the spicy arugula I get frequently from my local farm. This lasagna tames that spicy flavor nicely! Thanks Kristina!!

I have never read more than approximately 10 comments on the plethora of videos I've watched by Kristina. Today I read several. I'm truly amazed that people chime in just to leave negative, offensive comments. This isn't to say that viewers shouldn't be honest, b/c they should. However, when the approach is nasty & rude, your point (assuming there is one) is lost in the same gutter with your premise. Really, is it too difficult to find a respectful way of commenting or simply keep it moving?

I made a version of this and it was really good. I had canned tomato sauce, and black olives but I had everything else raw. I also heated up just until warm all the way through. Small success, I resisted traditional lasagna at a social event as well as, snickers (my favorite) cakes cookies, and other desserts. I have also made it about 2 weeks 75% raw.

This is salad not Lasagna. If I mixed some ground beef and bacon together could I call it meat salad? No because it's not salad any more than this is lasagna I'm going to make me a pizza, but instead of crust I'll use a slice of country ham, and for topping I'll just use two eggs. If you use one cup of pine nuts that has over 50% fat calories, which I would not consider as low fat...

fat is key. a human will die without fat. a human will die without protein. A human will not die without carbs. People arent fat because of fat. They are fat because of over processed foods and SUGAR (carbs). The more fats you eat the slimmer people tend to be, (the only exception being trans fats which are impossible for the body to process, but these are not found in your friendly little pine nuts) sooo yeah those pine nuts arent makin ya fat, just eat em!

I made the lasagna tonight (Sunday night) instead for time reasons - I did add a little sea salt to it and it was wonderful. Someone else commented that it might be nice to put it in the dehydrator for a bit and I agree, but like they said, it was fine as is. This was my first ever attempt at fully raw vegan lasagna and we really enjoyed it!

I made this a day ahead. I ate some the day I made it and wasn't that crazy about it. But went it ahead and tried it again the next day. Letting all the ingredients absorb together made it much tastier. Also, I like to spice raw foods up with homemade salsa or jalapeno paste. Very good.

I'm a raw vegan, and sadly I am allergic to zucchini 😭. I have been looking for a vegetable I can use as a substitute for zucchini. I am really bummed out that I can't make raw spaghetti or lasagna without having an allergic reaction. Do you have any suggestions? Please help me, my life will be complete if I can find a proper substitution! 💁😭 thank you!

Woohoo!! I have one week as a fullyraw vegan. I have been eating the fully raw burrito everyday since then..I just can't have enough of it, I absolutely love it..but I think this dish its going to be my next try mmmm Thank you for sharing all this with us Kristina Im really looking forward to get my energy back with this new life style!! This is actually easier than cooked lasagna...takes hours to make cooked sauce (peel tomatoes,etc). I'm headed to the store now...i cant wait to make this!!!!

If the fully raw foods are so good, why do you bend yourself over shaping your foods to make them at least visually resemble normal people's food? Just admit it, it's all salads and smoothies. Very bland salads without drop of oil or pinch of salt too. But I guess "bland salad" wouldn't get so many clicks on the video.

I love this concept and all the delicious greens included! :) I like it as is, I might add some jalapeno or another spicy chili in the sauce. Love a little heat lol.

Made this for dinner last night and it was amazing! :) I'm a pasta freak. I love pasta to the point where I'm concerned for my future. Hahaha I couldn't bring myself to have this without some pasta in it, so I compromised. 3 layers of zucchini for every 1 layer of pasta. I popped in the oven for a little while and let it sit to allow the zucchini to soften and permeate the entirety of the dish. Not the same as having a filling regular lasagn, but if it means I can have more of it, I'll deal! Thanks so much for the recipe Kristina!!

This sounds perfect for a hot summer day when you don't feel like heating up the the house! Definitely gonna try this! Summer is right around the corner here in Washington state and I'm feeling the heat. This will be the epitome of perfection for the piping hot days to come!
