Despite some of the negative comments, this was actually delicious. I added less oranges and more tomatoes and i also fried some seasoned mushrooms and onions together in organic coconut oil and added it to the mix. Hey its then not 100% raw but 85% is just as good and it tasted great. thumbs up from me👍

Sheedle Deedledee thank you! also love your profile picture :)
I made this twice in the last three days and LOVE it, though I did some variations/substitutions. I used a roma tomato and I didn't have seeds, so I used a couple tablespoons of crunchy peanut butter (Naturally More PB with flax seed, it's amazing). I also used a lot more cumin, garlic salt as well as a raw garlic clove, onion, chili powder, cajun seasoning and I used dry herbs. I also don't have a spiralizer so I meticulously cut the zucchini into strips by hand, lol, I think it's surprisingly worth it though. I'm amazed by the texture of the zucchini and the overall flavor profile of the dish. It's not "pasta" by any means, but really delicious, satisfying and guilt free, and I'm sure there are tons of ways you could alter it to match your own tastes - even add meat, or other things if you're not raw/vegan/vegetarian. I'm most certainly not, but I love exploring new healthy recipes. :)

So I made this yesterday and did a few substitutions with the sauce. I used canned mandarins instead of Navels, big red tomatoes from my garden and dried herbs. I used what I had at hand. Still, this sauce is fabulous! Clearly, I prefer my zukes to be somewhat cooked rather than raw. Overall, this recipe was a delicious success. Worth sharing.

I am one of those people who can't digest raw zucchini. Because of this, I was a little afraid to make this recipe, but I really love curry! I've been raw for about 5 weeks, and been craving something different. So, I tried your recipe (I made half, just to be sure I can handle it with the raw zucchini). I am really pleased to say that 1. It tastes delicious! The herbs make all the difference, there is no taste of orange here, it's a curry taste all the way! And 2. I could digest the zucchini without a problem! I think that the combination of the raw zucchini with the orange and tomatoes and herbs helped immensely with the digestion. I am really happy with this recipe!

FYI turmeric, curry powder, cumin, and other Indian spices have to be cooked in oil to activate their proper flavor, spice, and medicinal properties. Folks in the west are downing turmeric pills of raw turmeric and eating spices raw etc. It's just not how you use it.
@naslisntxaij9 жыл бұрын
I think she uses the spices for the smells and tastes. I am Asian and eat curry. I use these spices raw sometimes and they still taste the same as when cooked.

Just tried this dish, btw I am not a vegan, just trying to slowly go healthier. Smells like orange, tastes exactly like any curry dish!!! The only difference is it's naturaly sweet and not salty, and if you come from a meat-eating background or too much junk it will take you a while to get used to it not being overly salted. But it was delicious! I have no vitamix blender (too poor) but grated the hard ingredients and used a hand blender. Not bad for a start.
@ibrookelicious10 жыл бұрын
Kristina, I feel like I can never try any of these recipes because I don't have a vitamix. I really want to try these and become healthier, but as a broke college student, I know I can't get one for a really long time :( A normal blender would not be enough.
@ohyeahgroovy10 жыл бұрын
What is wrong with a normal blender? Also you can get these handheld mixer thingies , it's basically looks like a electric razor, you just hold it like a whisk and move it in ur bowl of Veges and it will blend it.
@carlamanson150010 жыл бұрын
Don´t put all the ingredients at once. Put the oranges and add a little bit of water, blend. Then, add the tomatos and blend again. Add all the rest. I don´t have a vitamix and my blender is not very powerfull, so I do this and it works pretty well.

I made it and sadly I had to throw most of it away. My sauce wasn't nearly this yellow (it was sort of brownish) and it tasted like sweet grass. It was just not edible. Maybe the herbs played a large role in it. Normally I would not throw basil, sage and rosemary in a curry. I would use cilantro or mint ... but that's another story. Sadly, no dish for me.

You are ALWAYS supposed to brown curry before eating. Not doing so can lead to diarrhea. Ask anyone who grew up on curry. As you know not all food can be eaten raw.
