Head under the water equalizes temperature across the body and helps going into cold water feel much less painful/intense since your body no longer has the reference to the previous/outside temperature. Full body just jumping straight in (head included) makes it easier, and it's important to note that it's only beneficial if you hold in the cold water for at least the time it takes for sensation to go away. Say 25-40 seconds. For either the pool or a regular shower, I find personally the best time to spend switching between hot and cold is about 2 minutes 30s cold, 4-5 minutes warm/hot.
