As always very satistfying to watch :) The only thing is that for the traditional recipe you should use lady fingers dipped into coffee (and optional liqueur) and the eggs are not pasteurized. The base is just yolks mixed with sugar and mascarpone, and the whites are beaten incorporated at the end, so no cream involved. But nice alternative anyway :)
