✍🏻INGREDIENTS:
* Cauliflower(फूलगोभी) - 1 Piece/500 Gram
* Carrot(गाजर) - 300 Gram
* Ginger(अदरक) - 100-125 Gram
* Garlic (लहसुन) - 50-60 grams
* Lemon(नींबू) - 4-5
* Green Chili (हरी मिर्च) - 200 Gram
* Lotus Stem/Root(कमल ककड़ी) - 2
* Salt(नमक) - Some
* Turmeric Powder(हल्दी पाउडर) - Some
* Water(पानी) - As Required
* Mustard Oil(सरसों का तेल) - 250 Gram
* Yellow Mustard Seeds(पिली राई) - 4 Tbsp
* Nigella/Onion Seeds(कलौंजी) - 1 Spoon
* Fennel Seeds(सौंफ) - 4 Tbsp
* Cumin Seeds(जीरा) - 2 Tbsp
* Coriander seeds(सूखा धनिया) - 2 Tbsp
* Red Mustard Seeds(लाल राई दाल) - 2 Tbsp
* Fenugreek Seeds(मेथी दाना) - 1 Spoon
* Black Pepper(काली मिर्च) - 2 Spoon
* Asafoetida/Hing Powder(हींग) - 1 Spoon
* Red Chili Powder(लाल मिर्च पाउडर) - 2 Spoon
* Turmeric Powder(हल्दी पाउडर) - 2 Tsp
* Kashmiri Red Chili Powder(कश्मीरी लाल मिर्च पाउडर) - 2 Tbsp
* Salt(नमक) - 2 Tbsp
* Black Salt (काला नमक) - 1 Spoon
* Vinegar (सिरका) - 1/2 Cup
* Sugar(चीनी) - 1 Spoon
✍🏻RECIPE:
Wash some Cauliflower, Carrot, Radish, Lemon, Lotus Stem, Ginger, and Green Chilli & Chop them. Keep the pan for heating, Put Mustard Oil, heat the oil & turn the flame off. Dry roast the Coriander Seeds, Black Pepper, Fennel Seeds, Cumin Seeds, and Fenugreek Seeds & take out them. Keep them for cooling down then coarsely ground the Spices. then add Asafoetida/Hing Powder, Red Chili Powder, Turmeric Powder, Kashmiri Red Chili Powder, Salt, and Black Salt and mix it well.
In a big bowl, add Cauliflower, Carrot, Ginger, Garlic, Lemon, Green Chili, and Lotus Stem/Root then add Achar Masala, Vinegar in it. then all mixture add to a kadhai & combined well. Then cover it with a muslin cloth & tie a knot & keep it for 6-7 days. (Meanwhile, mix the pickle gradually, mixing and tossing need to be done every day) The Pickle is ready, put it in a glass jar and enjoy the tasty Mix Achar Pickle for a long time.
