Wheat flour -2cups
Carrot -2cups
Jaggery -1cup
Dry fruits -1/2cup
Eggs -3
Sun flower oil -3/4cup
Baking powder -1tsp
Baking soda -1/2tsp
Cinnamon powder -1/2tsp
One pinch of salt
Steps:
Add 2tbsp of wheat flour to the mix of grated carrots and dry fruits.
In a bowl combine the flour, baking powder, baking soda, and salt by sieving at least 3 times.
Add 1/2tsp of cinnamon powder and mix well.
Blend eggs until it becomes soft. Add in oil in between and blend it well.
Add melted jaggery to this and mix well.
Mix in the dry ingredients to the wet and stir until well combined.
Fold in the carrots using a spatula.
Grease a pan with oil and keep a parchment paper at the base of the pan to allow for easy removal of the cake.
Pour the batter into the greased pan and cook in the cooker which is preheated for 5 minutes.
Spread salt at the base of the cooker and keep a base under the cake pan to prevent direct heat.
Cook the cake for 55 minutes (high flame for 5 minutes and rest at medium flame).
Check the cake by inserting a squeezer into the centre of the cake and make sure it comes out clean.
Leave the cake cool completely.
Invert the cake into a plate.
