Your channel is one of the true hidden gyms of KZbin. I found it a while back, and now I watch your videos before I go to bed. It may sound weird, but something about your content is so interesting while being extremely relaxing at the same time. I have recommended your channel to all of my friends and o hope that you keep on growing and eventually reach your “impossible task” of tasting all of the fruits. Gac fruits are under genus Momordica which is under family Cucurbitoidea, the family of gourds, cucumber, melon, and squash. That's probably where the gourdish flavor comes from.

Ah never knew that, but it makes sense because its the same genus as bitter melon, and the ripe fruits of that have similar red seeds with brilliant red arils. In Turkey those seeds are highly valued medicinally; the entire fruit is cut up and steeped for a few weeks in oil or honey, sometimes rubbed through a sieve into a paste, and and is supposed to be good for all sorts of things.

Some tips from my Granma after I showed her this video: a. If you prepare for your family meal, you don't always need to remove the seed from the pod if it is too hard for you, you can steam the seed with the rice for decoration and remove them when you eat, much easier (chewing on the cooked membrane is fun). Ofcourse if you make it for someone, or for sale and want it too look good, removing the seed before is ok. b. You don't need to fry the gac pulp, but you may want to mix with a little white liquor and leave rest, for better coloring, final rice will look more red. c. she complimented on sitting the rice in water, and usage of steamer. (She is mad though of the bootleg Thai rice trying to impersonate Vietnamese rice with the Vietnamese text. )

Gac is in the same family as pumpkins, melons and cucumbers, Cucurbitaceae. Hence the similar aroma. As it is of the genus Momordica (M. cochinchinensis), it is a close relative of the bitter melon or bitter cucumber (Momordica charantia) that the people of Okinawa call goya or nigauri, in the rest of Japan. I have already cooked and ate it. Believe me, it is VERY bitter! Just in time: goya seeds are toxic, the edible part is the fruit flesh. I don't know about gac. And congratulations, for this video and all the series!

@@mytech6779 I live in the country pretty much all produce I eat or try is grown by neighbors, local farmers, or myself ( I usually grow a few tomato plants each year mostly for my father since he is a tomato fiend). I mean yeah tomatoes taste like tomatoes, and I've had some sweeter than others but never "sweet as candy" (really doesn't even sound desirable) Does the objectionable flavor occur after refrigeration? There are some tomato flavor molecules that are destroyed below about 50f or 55f.

@@mytech6779 Cooking them or drying them seems to be the only thing that removes the flavor I dislike. There are a massive amount of volatile compounds in tomatoes that attribute to there flavor and the human tongue picks of on different ones depending on that persons genetics. It is kind of like with cilantro I love it wonderful herb my father on the other hand hates it since he can taste the molecule in it that tastes like soap while I lack that receptor. you should just dump them all in together, then use a spoon to stir it up, then pick the seeds out. If used to cook xoi gac(pronounced like soy), put some salt and rice wine before you stir them up, you can leave the seeds in and mix with the sticky rice then just steam, ONLY add sugar after the rice is cooked, add a some drops of coconut oil if you want to. mix well before you turn off the fire.

What about the fleshy skin, is it edible?
@WeirdExplorer
@WeirdExplorer 5 жыл бұрын
I've seen some people use the flesh in juices, but have also heard you shouldn't eat it. I tried a bit.. doesn't taste like much, kind of like the rind on a squash.

Ah okay, so this is related to Spiny Gourd (en.wikipedia.org/wiki/Momordica_dioica). Which again related to bitter melon (en.wikipedia.org/wiki/Momordica_charantia). But Gac or Spiny Gourds are not bitter, even they can be sweet when ripe. We eat Spiney Gourd when it's not ripe. The green ones can be sliced and fried, tastes really good. Add some tomato sauce and you can eat it like snacks.

I also love fruit, and as a kid I had a similar goal to you! I'm so happy that you make these videos, but maybe someday I'll get to do this myself! Thank you for responding too!

I actually have acidity issues with tomatoes so this might be a great alternative... Would you think this can be used on pizza?
@WeirdExplorer
@WeirdExplorer 5 жыл бұрын
hm... yeah I think so. It would be quite mild though. You may be better off with a low acid tomato, if you go to a farmers market look for white/yellow heirloom tomatoes.

Sorry for all of my comments but it helps the algorithm and I just have too much to say man. I'm Lisa by the way, hi. I'm wondering if you could make Mochi from the glutenous rice. I'm just afraid of all the rice going to waste.
@WeirdExplorer
@WeirdExplorer 5 жыл бұрын
Hey Lisa! I'm not sure! I Mochi uses glutenous rice flour, so its probably hard to make it without a flour mill. I'm going to keep making sticky rice to use up the bag I bought.

This is just a thought, but maybe you can make a video on how to find fruit for fruit-hunters who don't have the means to travel (e.g. how to find interesting fruit species in XYZ major cities). It may be very helpful.

The best advice I’d have to give anyone is just check specific markets like Korean, Vietnamese, Mexican, or Middle Eastern grocers. A 99 Ranch store was how I got into rare fruit years ago. Seeing so many delicious types of fruit I had never known existed blew my mind and now I have a collection of hundreds of fruit trees and plants! Go out of your normal shopping rounds to look for different types of specialty grocers and and buy anything and everything that looks fruity and unusual! Cultural markets like those are also usually less expensive (depending on where you live) than normal chain grocery stores and often have better produce anyway!
