INGREDIENTS
FOR POOLISH ;
WATER 200 G.
FLOUR 200 G.
DRY EAST 3,5 G.
HONEY 3,5 G.
FINAL DOUGH ;
WATER 470 G.
FLOUR 850 G.

TOMATO SAUCE ;
TOMATO PUREE 1 KG.
SALT 1 TEASPOON
OLIVE OIL 20 ML.
FRESH BASIL 6-7 LEAF

METHOD
1- Mix the water, flour, dry yeast and honey for preparing the Poolish dough. Place a lid on it and let it rest in ‘Gaggenau Cooler’ for 16 - 24 hours.
2- After resting; add water, flour and salt to the dough and mix it well. Let it sit at room temperature for 15 min to autolysis.
3- After 15 min. knead the dough, massage with olive oil and let it rest for an other 30 min. in room temperature.
4- Divide the dough to 250 gr pieces and round the pieces. Take the round doughs to a large tray and let an other sit for 1 hour at room temperature.
5- To make confit tomatoes, take the cherry tomatoes, thyme, limon stick, garlic and olive oil into a deep pan.
6- Set ‘Gaggenau Heating Drawer’ to stage 4 and cook the prepared tomatoes for 45 min.
7- As the ‘Gaggenau Heating Drawer’ can keep your plates and glasses warm in low temperatures, it can also warm up to 70 C and be use for actual cooking.
8- Make rounded pizza bases around 30 cm diameter from fermented doughs which should have round and puffy at the edges but thinner at the center, use your hands and give them shape without using rolling pin.
9- Spread the tomato puree on the doughs which you prepared only using salt, black pepper, tomatoes and olive oil. Take them with pizza shovel and put them in the oven on top of heated pizza stone.
10- Take the swelled and colored pizza doughs out of oven less than 1 min. and add fresh mozzarella cheese on them and cook for another 45 seconds.
11- When you take the pizzas out of oven, add arugula, burrata cheese and a part of confit tomatoes which cooked in ‘Gaggenau Heating Drawer’, add balsamic cream on top of them and serve.
