You can use either!! Both work well!!!

Thank you for sharing your recipe! Hoping to try it soon. Question for you: Why is it okay to add coffee to melted chocolate, when water can destroy it? I've destroyed melted chocolate before by dripping water in it, so I know it can curdle. But coffee is also water, or does the coffee and cocoa powder change the chemistry of the water enough that it won't have that effect on chocolate anymore? I hope to understand this better, thanks in advance!

@@tereservsherman4318 Yes, chocolate and water based liquids have a love hate relationship. But chocolate blends well when there is alot more than a drop or two of water. A drop or two of water causes chocolate to seize as you stated, but a larger amount of liquid does not have that affect. It's all in the amount of liquid that you add. The rule of thumb is: when melting chocolate be sure you add at least 1 tablespoon of water based liquid for every 1/3 cup of chocolate. I hope this helps!! I can't wait until you make this cake.
