Popped in here again. I still believe you did a real decent presentation here. Commercial butcher and kitchen cutlery is so overlooked by so many non professional people. Long ago I learned that professional tools are a huge step towards professional results. Sportsmen's "hunting" and "survival" knives are often just not the proper, efficient tool people think they are.

You are right about a filet knife being hugely useful. Flexible and thin. They work well for more than fish.

I use the 4" rapala all the time. Perfect for boning out the meat. But i found that using a knife with a bigger belly is a lot faster for skinning out the deer and my hand isnt killing me at the end of the day. That and it helps having a thicker spinned knife for jointing.

check out the dexter Russell beaver skinner. Smooth continuous belly with a rounded tip. great for skinning.

Yep a dedicated skinning knife is great for alot of people and a fantastic addition. For me I do all my skinning with a paring knife and love it. I use the small dexter ones I show here.

Hell I thought I was the only one that used my fishing filet knife for butchery haha. And you use Dexter Russell as well which is what I upgraded to after my filet knife. 6 inch curved semi flex boning knife and 10" cimeter. Do everything. Everyone recommends victorinox. Don't get me wrong, they make great knives, but Dexter Russell makes them just as good, cheaper, and made in the USA.

A nice set of knives good kit I’m surprised to wherever you don’t have a 6 inch skinning knife I find it works great to take the hide off animals

Personally I prefer a small 3 inch knife for skinning. Just personal preference probably cause I'm used to that size from my trapping days.

I think a bone saw comes in very handy for cutting off ribs and neck I guess you can use a cleaver for that but a saw does come in handy in my opinion.

The dexter style knives dont seem to have a very long tang. I bought an 8 inch cleaver under the name of Marlin from Southern states and its heavy duty except for the tang length into the handle. Have you ever broke a handle?

I have never broken a dexter knife. But I only use mine for food and game processing. I don't use them in the filed or anything hard use. Just skinning, boning, and meat work.

I used Dexter knives in a commercial setting for a few years, the only time they ever broke is when we had to use them as a cleaver, whacking with heavy force. These are great knives and I'd highly recommend them with almost a decade of daily experience. If you need a cleaver though find another brand to add to your collection, I like dalstrong as well.

Tang length is going to be pretty much entirely brand dependants. Dexter Russell, Victorinox, and F,Dick are the only companies that I know of that seem to maintain a good reputation while making and selling large numbers of these style knives, they aren't necessarily the only companies that make high quality commercial grade knives but they do make good ones.

Hey, man!! Love your insight and info. Could you please put out a video about climbing aiders. Single step and also 3 steps is what I’m looking at but I’ll trust what you think is best. Specifically, I will be using the new LWCG stand and 4 mini sticks, so I’ll love to have an aider if I need to get a few more feet up in a tree.

After using and contemplating knives for about a half century, I can now spot knives that are just not well thought out tools pretty quick. I can't believe how many knives are so made to sell as opposed to being made to be efficient working tools. Kitchen cutlery primarily marketed to women for home use seem to be the worst offenders when it comes to BS styling, bad handle ergonomics, and being generally overpriced junk.

Umm... dude. Are you just gutting , filleting & skinning bluegill ? You said everything can be done with 2 fillet knives ? Really . Cause game processing takes like 10 utensils . Scaler, fillet , skinner , cleaver axe & mallet , bullnose butcher knife , boneing knife , pearing , a hook . Plus a steel & stones . No mention of material ? Alloy is as good as folded forged steel ? Stainless variations or carbon steel ? Anvil tang vs. Full tang ? Rockwell hardness for some ? Malleability for others ? No ... ok then. I guess if cuts come out looking like it came off of roadkill it's no big deal ? Run the length of the bones with that fillet knife to scrape for grindings then use the same blade to cut back straps and wonder how the dull skewed blade slipped and wound up stuck in your kneecap . Cause no one knows which cuts to take with hardened (sharp) blades ... screw it , show em how to process with a carpet knife next .
